How do you 'do' coffee for a big party?

How do you "do" coffee for big parties? We use instant, and it just seems kinda weird to boil water on the stove or in the MW... and this leads to my problem and I sure would like some ideas.

My little parish wants to have a pot luck brunch the first Sunday of February to welcome our new pastor and they want me to organize it. Okay, no problem. I'll be able to turn in my receipts to petty cash for reimbursement of ice, soda, bottled water, tableware utensils, etc.

How can I "do" the coffee? People are going to expect it with the cake.

Just about everyone is a senior, or pushing senior citizen status. It seems most people use instant coffee, but a few have those 1 ot 2 Cup coffee machines. The church itself does NOT have one of those giant coffee or hot water urns, so that's out--the church "kitchen" is just a small back room with a fridge, freezer, a counter and hot and cold running water. Very basic.

Do I just put instant coffee in the bottom of a styrofoam cup and add hot tap water, put the cups all on a tray, and bring them out? That's the only idea I can come up with, but I'm not sure how people feel about coffee being made that way. Thanks!
