Protein for a picky vegetarian?

My sister is concerned about my niece getting enough protein. She's 12, and has been a vegetarian for several years, altho' no one else in the family is.

Fish and meat are obviously out, (even when she would still eat meat or chicken occassionally, she completely refused fish or seafood of any kind!) and she's tepid about tofu or tempeh.

She seemed to like the soy milk smoothies she had when she spent the weekend with me, but she despises ceral, so we're not sure how to get more soy mik in her.

She likes dairy products -- perhaps a little too much! (A cousin's son who has similar eating habits is referred to as "the cheese-atarian") Of the veggies she eats, she seems to prefer the starchy ones, and plenty of bread.

Any suggestions for good diet guideleines, especially good sources of protein?
