Looking for the best baby beluga (lentil) recipe!

As part of my pledge to up my intake of pulses, legumes and the rest, I picked up a bag of the cutest little black beluga lentils. So small they actually look like roe. (I'm wondering if I can cook them with brine and dill and make mock caviar?)

I'd like to use them in a way that really showcases how beautiful they are. (Most lentil recipes seem to make a dull brown mush. A *tasty* brown mush, but not very picturesqque.)

Anyone got a favorite recipe to share? I'd love to hear suggestions on what to do with these tiny little gems!

(The tiny black ones are the belugas. The mottled ones are French lentils or lentil du pays, (which I'm also enjoying!) and the relatively big ones are brown lentils.)
