Concrete brownies

I have brownie issues. I've tried 2 different recipes (one from Better Homes and Gardens and one from the back of the Baker's Chocolate box). Both were suitable only for filling potholes on the street. Couldn't even cut them with a knife. Big brownie-pan-sized chocolate granite.

Now, this was in my old oven, on which the temperature could be wonky at times. So now I want to try brownies in my new oven. But I'm hoping to garner some tips from any baking experts here. Should a knife stuck in the middle of a freshly baked pan of brownies come out clean, or should some moist crumbs/batter stick to to the knife? The concrete disasters described above I baked till the knife came out clean, but the top still felt quite springy.

Any brownie gurus out there? ;-)
