Prep & Freeze for later quick cooking: Ideas?

Prairie love's post on how long it takes to get dinner on the table got me to thinking. Now that it's just me and DH most of the time (with both boys off to school), I am trying to simplify dinner, especially on weeknights.

At the grocery store this weekend I picked up a couple of packages of thin steaks (from the whoops we butchered too much section), and when I got home, I cut them into strips mixed them up with marinade, put into zip lock bags and stuck them in the freezer. Plan is to stir fry them as fajitas with minimal prep time one night.

Do you pre-prep meals and freeze for cooking later? Aside from storing meats in marinade, what other kind of prepping can be done in advance like this?
