Dinner was amazing and the company was even better! Raymond and Cathy are absolutely delightful and lots of fun. Don't think there was one moment of silence the entire evening! Truly it felt like we had known them for years. Just a great evening but I'll wait for Cathy to post pics before saying more. ........and remember Cathy you promised not to post any embarrassing ones ! LOL

I've had this recipe since my early college days (1980's) and most everyone likes it except confirmed non-squash eaters. I got the recipe card from the health food store in East Lansing MI. Cheesy Tofu Squares Makes 8 servings of about 230 calories and 500 mg. sodium each. Grease 8 or 9 inch baking dish, preheat oven to 350 degrees. Ingredients 8 oz. white cheese (mozzarella, swiss or cheddar) (You can use a little less than this and get away with it, like maybe 6 oz., if you are really touchy about cholesterol and fat. It's better of course with all the cheese.) 8 oz. tofu 1 TBLSP tamari or lite soy sauce, or regular soy sauce 2 TBLSP oil 1 med. onion, chopped 2 carrots, grated 1 med. zucchini or yellow summer squash, sliced thin (here's where I'm thinking you could use partially cooked spaghetti squash, but I've never tried it. Use about a cup to 2 cups I would say) 3 large tomatoes (can use a small can of canned tomatoes, with the juice drained.) 2 TBLSP hot Mexican salsa (or use med. or mild if that is your taste. I use med. and a dash of tabasco) 3/4 tsp. oregano 1/2 tsp. dried basil or 1 1/2 tsp. fresh basil 1/4 tsp. salt (omit if using regular soy sauce) 1/4 tsp. black pepper 4 eggs (I'd probably use three eggs and two egg whites to cut the calories a smidge) Directions Grate the cheese and set aside. Drain the tofu (see that tofu link above for how to do that), and dice the tofu into small cubes. Place in a small bowl and mix with tamari (or soy sauce). Set that aside too. Heat oil in a large saute pan and add onions and carrots. Saute 5 min. or until tender crisp. Add squash and tofu and saute until squash is tender (if you're using a harder squash, you will have to add it first to the pan and saute it a little longer than a zucchini or summer squash. Meanwhile, peel tomatoes and chop fine. (When I use garden fresh tomatoes I never peel them, and most of the rest of the time I use canned ones which are already peeled.) Add tomatoes to squash mixture along with salsa, oregano, basil, salt and pepper. Simmer rapidly until liquid is evaporated (this is important!), about 15 min. Remove from heat, let cool to room temperature, (or at least cool enough it won't cook the eggs and melt the cheese when you add them). Beat eggs and stir in 1/4 cup grated cheeese. Stir egg mixture into cooled tofu-squash mixture. Pour half of this mixture into a well greased 8 inch square baking dish (I use a little larger baking dish when I make this, like maybe 9 inches or 7x11). Top with half remaining grated cheese. Layer with remaining tofu-egg mixture and top with cheese. Sprinkle top with paprika if desired. Bake 25 minutes or until eggs are set. Remove from oven and let stand 10 minute before cutting into squares. It doesn't say what temp. to bake it at, I would do 350 degrees. This is very yummy, especially if you like those kinds of vegetables, which I do. I'll bet you could sub chopped broccoli or cabbage for the squash too.

Well, here I am! Late to this party, as I got home last night. First things being first, we cleared out the dog crate, food and treats by packing them up and walking them over to different neighbors who knew Luna. (She had a lot of friends in the neighborhood.) Delivering news like this is hard, but right this minute I think the hardest is having such a quiet house. Packing up her favorite toys choked me up, but it's done. Working my way backwards and starting with OKC, I regret we didn't get to meet David or Sally, but I'm anticipating there will be another opportunity. Having the extra time allowed us to blow on so I could visit my mother. We drove 4,603 miles in three weeks, so you might say it was a whirlwind (tornadic in places), and we were ready to get home. Meeting Donna and her friend Debbie was fun. We met for breakfast in Albuquerque and I really enjoyed it. It's so nice to have the CF in common, and there were no awkward moments in the conversation. In fact, I'm finding it's so easy to talk to the CF in person, it's kind of hard to leave! I enjoyed every moment, and hope that with Donna, David and Sally, we have an opportunity to meet again. I feel pretty certain we'll see Karen (and Tom) somewhere at some point! (I think it must be easy to form a certain bond with the first people you meet.) I've tried for five GT's, and have managed two so far...The best thing is my New Year's resolution of meeting some of you is up and running! I'm loving it and at this point have TWO GT's under my belt and COUNTING. Thank you for your generosity in wanting to meet; it's so nice to feel a part of the CF in real life. oceana, I posted this because I think all creatures are beneficial including the blue heron. Netting can be placed over Koi ponds to discourage blue heron from predating ornamental ponds. I have also heard that heron will not wade into deep sided ponds, but only shallow sided ones - not sure if this is true but worth a try. They are very beneficial and worth protecting. I never would have believed it either, but I saw it myself. I kept watching the blue heron because I saw them walking silently over the grassy areas on our property and couldn't figure out what they were looking for. Then last year a blue heron speared a gopher and swallowed it whole in our back yard. They catch it and keep flicking it up in the air till they get it just right and then they swallow it whole. Another time a blue heron speared a gopher and carried it off, pesumably to feed it's young. Later I told locals about the hunting habits of blue heron like I had discovered something new. All the locals knew about the blue heron and their hunting habits. There is a sycamore tree close to us near the river where blue heron have nested in the same spot for the last three years. The babies are in the nest for many months before they fledge - baking in the sun and rain and all kinds of weather till they are strong enough to fly away. We live in southeast central CA along a river coming out of the Sierra - we are so lucky to see all the different wildlife here. Today I was painting the side of my house and saw a huge preying mantis and relocated him to a bush so I could finish painting. By the way great horned owls and barn owls also prey on gophers. A nesting pair of barn owls can eat up to 1200 rodents in a nesting season feeding their young.

While you have offered some interesting get-together partners, I am pleased to say it's Lakemayor/Karen. Actually Karen and Steve are coming for lunch. I am eager to meet them.

We both had CF members validate that neither of us are ax murders.

But can you really trust those CF members who validated? LOL - reminds me of my first (I think) swap and Lars sent me his homemade vinaigrette. My Dad thought for sure I was going to be poisoned to death - couldn't believe I would actually seriously eat a salad with that vinaigrette from a complete stranger!

I must say that Ken stayed home to check out Chase and David (he had previously been convinced that Caliloo wasn't an axe murderess) when we had Martini Mayhem Weekend a few years ago. Guess they passed the test :)

I can't believe karen would leave Michigan in December and miss out on all this lovely snow!

I've met Karen and her hubs AND Kathy and Raymond, and I've managed to survive no more scarred emotionally than I was after spending 5 days living with Jessica. (grin)

Have fun, I'll watch for pictures.

It may comfort you to know that their brief visit with me last fall was pleasant and no one was harmed. They exhibited no traits of axe murderers or sexual predators so far as I could tell.

Annie, I know it's hard to believe that we would leave that beautiful snow in Michigan, but, it's true. We are going to Cathy and Ray's for lunch tomorrow in sunny Florida and we are really excited.

Jim, glad you found us pleasant and we will vouch for you also.

Cathy said, to come early and "roll up your sleeves" and we will cook together. That will be so much fun! However, Cathy do you want us there around 8:00 a.m. to get everything ready by noon or 1:00 p.m.? LOL

David, I did think about taking them to Hot Rod's then back here for dessert and visitation. BTW, Hot Rod's was on the Food Network (Diners, Drive In, and Dives).
