Sealing an oak bathroom door

I posted this question on the woodworking forum as well, but haven't gotten many responses. We're finishing up our bathroom remodel and are putting in an oak 2-panel Shaker style door. It's currently unfinished, so I need to put a few coats of polyurethane on it.

In our old house, I had put in a 6-panel pine door in our bathroom, and within 2 years, 3 of the 6 panels had cracked. I think it is because when I put the poly on the door, it sealed the panels in place and wouldn't let them expand/contract.

Should I be sealing the new door without sealing the panel edges? If so, any suggestions for a technique to do so? Any particular brands of polyurethane you'd recommend?
