How do I know if they are OK?

Ok I'm not sure if this is a silly question or not but I'm really unsure so here goes. How do I know the worms are OK? What I mean is that when I check by rooting around in their 3/4shreaded newspaper:1/4cedar chips bedding that I've burried food in I see worms. I'm also seeing castings. But how do I know that the numbers are OK.

The worms that I see seem fine, but even 1/2 of them could be dead and I wouldn't know cause it's not like I can take roll. And wouldn't they just eat the dead worms?

I'm particularly curious because of the weather changing, rains, cause I'm totally new to this. How do I know I'm feeding them enough-I've seen mold 'blooms' so I've held off on feeding a bit. I only just started with 1/2 lb of worms. There hasn't been a mass exodus or dead worms.
