Composting Hospital Food Waste

Hello,

I am a Civil Engineer from the UK, I also undertake charity overseas development work in the third world. Later this year I am off to Uganda with a small team to impliment a waste management system at a regional hospital. A critical component of the waste management system is the separation of different types of waste into, food, domestic and medical waste. The food will be composted and the medical waste incinerated using the domestic as fuel.

To compost the food waste we need to construct a series of large "bins". This will be a large concrete slab broken into bays with walls. The aim is to fill a bay and then move on to the next.

I have not designed these before and thus have several question relating to the technology:

How long does it is take for the composting process to complete? This will determine the size and number of bays.

In a hot climate would the composting process work better in the shade?

Does anyone know of any links to other sites that might be useful?
