homemade beef jerky...is it done?

I got a dehydrator for Christmas with instructions on making jerky. So I got a 1.3 pound flank steak and cut in 1/4 inch(maybe closer to 1/2 inch) strips, marinated it overnight and put it in the dehydrator for 12 hours on the highest setting which was 160 degrees F. I patted all of the oil off the top like it said, but I don't know if it's quite done yet. The instructions said it would be tough. When I break mine apart it doesn't feel too tough, certainly not like store bought jerky. It's a little lighter colored on the inside too, but not too bad. Has anyone made this before? Should I keep it going? How tough is it supposed to get?
