So I'm finishing off my liqueur, and now I have a jar full of brandy and vodka and lemon thyme soaked apricots, and they are kind of brownish looking because I used unsulphered organic ones. I'm not sure what to do with them. I have a recipe for apricot hot pepper jelly but I'm not sure about the appropriateness of these slightly rehydrated, alcohol thyme flavored apricots for that recipe, although flavor wise it seems intriguing. I have another for an apricot chutney but even that one I'm not sure off. Also I make apricot pineapple jam but I am kind of sick of that one. Anyone have a recipe or ideas of what might work with these? Apricot fruitcake maybe?
