Words Of Wisdom, Please

I have a couple of cans of cake and dessert fillings that are outdated. One, in fact, I do believe is from 2006. These were not home canned, have no dents, bulges or rust on them. Do you think they could safely be used, after opening and sniffing, of course? They are almond, apricot and raspberry filling. Also, I have some store bought jams that I had intended to use in making cookies. They also are outdated, but still sealed. What would you do? I hate to throw them out, but I also don't want to take any chances.
