Anyone Tried Ellie Topp's Mixed Fruit Chutney?

The recipe is on page 212 of SMALL BATCH PRESERVING.

I tried it last night and found it ended up with way too much liquid. I had expected the opposite problem, because the tomatoes I used had been frozen and I'd discarded some (though not all) of the liquid they'd expressed in thawing.

I let it cool overnight to see if it would thicken, but it didn't, so I cooked it another hour or so. Now it's looking and tasting on the overdone side, and still a bit wet for chutney.

Anyone have a different or similar experience with this recipe? It also seemed to me to call for an awful lot of brown sugar, but there is a lot of vinegar too. The flavour is pretty good.

I've never made chutney before. I'm not a fan of mangoes, or of the "Major Grey" type chutneys that are what is mostly available in the grocery here, so I was really looking forward to having this on hand to go with Indian food---I like all its ingredients (apples, pears, plums, tomatoes).
