Can fermented foods be stored in pantry, vacuum sealed in jars?
Comments (2)Officially, shelf storage isn't recommended unless the food is heat processed. But many fermented foods require only BWB processing not pressure canning. Personally, since yeasts and molds are the main concern, I would be comfortable with some fermented foods stored in a pantry IF it is a really cool-temp pantry like a root cellar but that's JMO. Elizabeth Andress did not give any information about the refrigerator pickles at the conference. One of the things I wanted to ask was about that subject. LISTERIA What is Listeria monocytogenes? Listeria monocytogenes (Listeria) is a pathogenic (disease-causing) bacterium that is food borne and causes an illness called listeriosis1. It is frequently overlooked as a possible cause of illness due to its unique growth capabilities. First, it is somewhat difficult for laboratories to grow, and when they do so, Listeria can be confused with common harmless contaminants and disregarded. Second, most bacteria grow poorly when temperatures fall below 40°F, while Listeria survives in temperatures from below freezing (20°F) to body temperature and it grows best at 0°F to 50°F,1 including the temperature range that we use for refrigeration. As a result, Listeria may be transmitted in ready-to-eat foods that have been kept properly refrigerated. Its ability to grow in such diverse environments is just one of the many challenges presented by this dangerous bacterium. It is estimated that Listeria causes approximately 1,600 cases of listeriosis annually, resulting in 415 deaths. Where does Listeria monocytogenes come from? There are many opportunities for contamination with Listeria during the process of food production because Listeria monocytogenes is ubiquitous in the environment.1 For example, it can be grown from wild and domestic animals, birds, insects, soil and wastewater, and vegetation. As it is a bacterium found in soil and vegetation, it is easily contracted and transmitted by herd animals. Listeria is found in grazing areas, stale water supplies, and poorly prepared animal feed. It can live in the intestines of humans, animals, and birds for long periods of time without causing infection. The bacterium is often isolated in cattle, sheep, and fowl, and is also found in dairy products, fruits, and vegetables. Comments (26)Hmmmm... bailey's, grape pucker, red bull, piesporter goldtropfchen, and a lone can of pbr. Cool stuffs... pickled deer heart with chicken gizzards, saurkraut stuffed bannana peppers, and pickled asparagus spears. Next spring the asparagus spears are getting some oil and italian spices in the pickle juice. About ten bottles of hot sauce for hot stuffs. The usual capers, olives, and pickled onions. The mayo expired in 2002 and I should probably throw it away. On garbage day I make a pass in the fridge. Sometime I need to check expiration dates and pitch the old stuff. Cooking up last years eggs and feeding them to Dolly dog as a treat. A few Ida Reds rolling around in the bottom drawer. I like them cold. Do the same with granny smiths when Idas are out of season. I thought all the gals here knew a k-frame was Smith & Wesson's medium weight revolver frame. Not many female gun nuts in the world. I don't know if Lyra counts as a gun nut as she is one of my imaginary personalities. Aren't all personalities imaginary? If not how would we grow and become a better person? If it changes at will it must be imaginary. That reminds me... I keep some of my meds in the fridge. My cabbage head went bad before I could use it all so it will hit the compost pile this week. A package of bacon going on the stove right now before it gets away. A couple chunks of green meat... hmm? Work is giving me a turkey on Tuesday so I need to make some room. I don't remember buying that half & half... must have been drinking scotch. Need to add half & half to my grocery list as scotch and milk sounds pretty good this morning. I din't get up till afternoon so it is still morning in my book. I'd do pictures but my software is not installed on this computer yet. Reminds me I need to fix my old computer so I can get at my tax records... that time of year being on the horizon. Comments (30)Ack, Arlene, that's too bad. I like a lot of different kinds of foods, and I keep trying the ones I don't like. That 7 year rule, you know. I'm picky, but I'm adventurous, if that makes sense. I'll try nearly anything once, but don't care for extremely strong flavors. Nothing really incendiary hot, mouth puckeringly sour, extremely bitter. I'm a middle of the road adventurer, LOL. Whole Foods has artisnal kimchi? Wow. I can even get commercial kimchi here in my small grocery, canned in jars with pink lids. It tastes more like sauerkraut than anything, though, and Elery doesn't like it very well. If we found a very good commercial kimchi we might just buy that. No, scratch that. We wouldn't. You know me, I gotta MAKE IT MYSELF! (grin) Plus Elery shares with his son and his daughter has a friend that makes kimchi soup, so now she wants some too.
