Ok, what did I do now?? (Canning cinnamon apples)

I made Apple Wedges in Cinnamon Red Hot Syrup (Complete Book of Home Preserving by Ball page 159). I packed the apples with 1/2" + head space as directed, but when I added the syrup, the apples floated - so I couldn't cover them as directed... I guessed the best I could and canned. The water turned red. When I removed the cans, two were hissing a little, and at least one was leaking red syrup. The lids were already down when I removed them from the water (Recipe says to turn off heat at the end of processing and leave in the water for 10 minutes - I assume the lids "popped" durring this time).

Are they OK or should I refrigerate?
