A question on Flavoured Oils

Hi Folks,

A tread IÂve participated in over on the Hot Pepper Forum got me thinking/questioning the safe storage time for flavoured oil (in this case Hot Pepper Oil).

Based on the inherent risk of botulism growth in this type of home made product, I communicated that 2 Â 3 weeks storage in the refrigerator was the expected safe use life.

Reflecting on my post, IÂm questioning whether or not I am being accurate. If using for something like a salad dressing with some vinegar then IÂm probably within a reasonable time range, yes? My main doubts surround using the oil to say, marinade meat or cook with. Can I assume that since IÂd be heating (cooking) the product into 300F+ range, it would be safer to use it for a longer period of time?

IÂd hate to mislead folks. Any input would be appreciated.
