Pickled Walnuts - Has anyone eaten or made them?

Whilst searching online I came across discussions about Pickled Walnuts. Now, I've seen the various methods and recipes and it always calls for "unripe" walnuts -- those picked in June, of instance, before the shell has hardened. We've just harvested our ripe walnuts, so obviously we couldn't make any of these pickles this year, but I was curious as to whether anyone else has eaten this very English pickle?

They're supposed to be popular at Christmastime, and I've seen recipes for using them in meat and game meals, as well as eaten with cheese.

I'd love to hear if any of you have any experience with this delicacy. It looks like yet one more unusual food for me to try!

I love pickled walnuts although I have never made them. But they are quite a strong vinegary pickle. Very dark brown vinegar and the walnuts go almost black. The commonest make over here is Opie's and they are always in the shops around Christmas. I usually buy a lot because they tend to be harder to find at other times of the year. We like them with any cold meats. Perfect with left over turkey.

I was hoping I'd hear from you, Flora. (Are you the only member from Britain? Perhaps so.)

Maybe you and I could plan on making some and exchanging our ideas and results with each other this next summer, in June-July, 2010? Do you have someone with English walnut trees ... who would let you grab a bunch of the walnuts before they ripen? The recipes don't look that complicated.

I've found one company in the US that makes Pickled Walnuts, however they use Black Walnuts which have a different, and stronger, flavor (and stain the hands badly when picking and peeling). But like most of us, I want to make it myself!

From the research I've read, India has spent more time developing Hyacinth Bean than those of us in the Temperate regions. Here they are mostly grown for their flowers, for decorative purposes. Most varieties are difficult to bring to seed in the higher latitudes, due to daylength sensitivity, a common problem in tropical-adapted vegetables. The climbing varieties mentioned above (in my older post) all flowered close to the equinox, which was just a few weeks before frost. There are a few varieties bred in India that are day neutral, so they can be grown here. The funny thing is, the breeders were seeking bush habit... the day-neutral trait was just a side effect. Seeds of India sells two varieties in the U.S. I've grown one of them, a white-flowered variety with brown seeds; it flowers very quickly, 30 days after planting. "Valor bean Lakshmi" Are the beans eaten mature a particular color when dry, or does that not matter? Someone once told me that white-seeded hyacinth beans were the ones eaten as mature seeds.

Check your library for the book "Wild Fermentation" by Sandor Ellix Katz (he also has a good web site - http://www.wildfermentation.com and YouTube videos). Lots of great information and recipes in his book. You can make low-salt and even salt-free sauerkraut. It's better to use less salt than to over-salt and then rinse your kraut. Rinsing removes all the "good" stuff. And yes, temperature is important like you thought. Low-salt kraut would include 1-2 teaspoons per quart of kraut. A quart of kraut takes about 1-1/4 pounds of cabbage (about 1 medium-sized cabbage). I make kraut in a quart jar for convenience, and never heat process it, just refrigerate it and use it fresh. If I need to preserve it, I'll freeze it. FYI - fermentation goes faster without salt. Some salt-free options are wine, savory seeds and seaweed and it's all detailed in "Wild Fermentation". Another good book for lacto-fermentation information and recipes on a variety of foods is "Nourishing Traditions" by Sally Fallon. -Grainlady

I love them. My olive salad is similar to Paula's, but a little different. When we spent summers in the mountains and friends came up, I'd make them to take on picnics. They were always a big hit. MUFFULETTA Olive Salad: 1-1/2 c. chopped stuffed green olives 1 c.chopped black olives 2/3 c. extra virgin olive oil 5 Tbsp. finely chopped Italian parsley (or use about 1-2 Tbsp. dried) 1/2 c. chopped pimento (I leave this out) 2 anchovy fillets, mashed (optional, but it really makes it good for some reason) 4 cloves garlic, minced 1 tsp. dried oregano 2 tsp. lemon juice Pepper to taste Mix all together and let marinade at least 30 minutes. How you make the sandwich is up to you. My original recipe calls for mortadella, Genoa salami and Mozzarella and a round loaf of Italian bread. I use ham, Genoa salami and provolone on hoagie rolls. I take some of the soft bread out of the center of the rolls and brush them with the olive oil in the salad so the filling doesn't fall out. Make however many I need, wrapping each tightly in saran wrap to refrigerate overnight. You can put whatever you like as far as the meat and cheese go.
