Quick ? about making Hot Pepper Sauce

Hello again folks,

I remember reading a thread somewhere (can't find the dang thing) that simply stuffed a jar with peppers and filled it up with 5% vinegar. Then it went into the pantry for 3 to 6 months before processing. My question is: Do you have to "seal" these jars with a BWB, or can you just tighten down the lids? What about headspace? Is this even safe LOL?
