Help With Too Much Cider

We had a pig roast fundraiser yesterday and I have ten gallons of cider left over.

I've got five gallons boiling down for boiled cider, but I'm wondering, for the other five gallons what shall I make?

I think some cider jelly would be in order, but do any of you know if I can bottle cider syrup in quart jars? How long would I process?

That would be a humongous amount of cider jelly!

Just freeze the cider in portions and then use it in many different ways - baking, drinking, marinades, sauces, jelly, etc. - through the winter.

Make cider muffins, mini-cakes or better yet, cider doughnuts and freeze them. Buy apples and use it to make applesauce and/or apple butter for canning.

If I was going to cook it into syrup then I'd process it just like the apple jelly recipes - 5 min for pints but no quarts.

Thanks, Dave. Why no quarts for syrup? Is it because no testing has been done?

I forgot to add, I'm out of freezer space. One chest and one upright, and both are full. And at $7.00 a gallon, I don't want to give this stuff away.

First, the DIY test kits are a waste of time and money. They are notorious for being inaccurate and mis-leading. So either get a pro test done from your local county AG office or don't do anything to your garden based on the DIY kit. Second, most all garden soils will test normal to high in P as most all soils have plenty of it naturally - one reason why most new fertilizers are being sold P-free. Third, most compost can't be your only source of nutrients, especially N, unless your soil also has a very active soil-food web, a good working micro-herd of bacteria to convert the compost to nutrients for the plants. How much N your compost may have in it all depends on what the rabbits are fed and how long it is composted. N leaches and evaporates out of compost and soil very quickly - which is why it always tests low - so it may require regular additions of other N sources or at least of more quality compost several times during the season. Too many who grow exclusively with compost make the mistake of assuming a 1x a year addition is sufficient for N. Unfortunately, given the fragile nature of N, it isn't. Get Form 1040-ES for 2009. It has what should be the correct tax RATES for 2009. Figure what is your yearly salary, estimated interest income, whatever else you may have. Self-employment, even, but then you have to include Schedule C and SE. Figure your personal exemptions and deductions as best you can based on either itemization or standard deduction for your filing status. Calculate what is the tax liability against the rates in 1040-ES and divide that by the number of pay periods you have. That tells you have much tax to withhold from each check. I've been doing this for years on a spreadsheet, correcting the numbers as the year progresses. Some things are difficult to estimate, such as dividends and capital gains for income, or unexpected medical expenses for deduction itemization and any last-minute changes to the tax code. I AM the payroll department at work, so I can adjust my withholding whenever I want. I purposely try to have a small balance due. One year I owed or was refunded (don't recall which) $26. For 2008 tax year I owe $115. 2007 tax year I got a $1,055 refund, tripped-up by some medical expenses for an incident in June that I couldn't predict if it'd all be settled by end of the year (which it was, by just a few days).

I never ever salt ocean fish. They come with just the right amount of salt, by nature!!! I will add a pinch to freshwater fish. I also never salt chicken. Then again, maybe the dark meat I prefer doesn't really need the help?? After watching a few big name chefs salt their steaks on YouTube, I decided... hmm, maybe I should add the amount they added.. I did stop short a bit. (To Gordon: IT'S SALLLLLTY!! Vicariously tossing the plate on the floor, a la Hell's Kitchen!) Nope. A little really does go a long way! That poor hangar steak... it was so sad, I had go buy another to cook it right. The smallest sprinkle of salt, a little ground pepper, and a dash of garlic powder. The only thing I highly salt are potatoes. And not those delicious Yukon golds. Just Russets (and i dont buy Russets for home cooking). I do lightly salt corn on the cob, but not regular corn in a dish. In most cases, if salt ends up in a preparation, I'm using low sodium Tamari, for the tamari flavor.

It's not hard cider is it? If not, I don't see why you just couldn't can it as "apple juice" IAW NCHFP instructions, since they say to buy it from a local cider maker.

They do say within 24 hrs of pressing, I don't know if you know when it was pressed, but I assume if it's been refrigerated the whole time it's OK? I mean, it's not as *you've* had it a week?

Then you can make syrup, jelly, whatever at your leisure.

I did buy it from a local cider/orchard, but I don't know when it was pressed. I think this idea of using NCHFP's juice instructions is a good one, though. Thanks.

Does it have a "sell by" or "good until" date on it? You could always call them (even if just have a batch number on it) and find out when it was pressed.

i don't know if it's been more than 24 hrs if there's a problem canning it, NCHFP doesn't say if there's a time limit, they just say "for best results"...

If it was pasteurized (which I assume it was) you'll have to add some pectin later to make jelly with it.

Ajsmama, it wasn't dated. I think that's because I put in a special order for the date of the hog roast. It was pasteurized. Following your link, I processed it. I did boil it to reduce it somewhat first.

Then, I found an additional four and a half gallons of apple/raspberry cider in the basement refrigerator. Good grief... Now what can I do with it, apart from just canning it as juice?

We had more people at the fundraiser than I anticipated. No food left, just cider.

This never ends. Thanks for that link; it was a lifesaver.

Apple/raspberry - mmmmm! I'd still can it as juice, and make jelly or syrup later.

If I lived closer, I'd take some of that off your hands!
