Isn't Annie's recipe the best. I can even bribe my boss into letting me wear jeans to work with a jar of Annie's salsa, though she said she would have let me wear them anyway.

I think everyone adjusts it to their own tastes. I use lemon & lime juice for the acid. And I too consistently get 8 pints also, I think it has to do with measuring. When I chop the veggies I round the measurement and strain them well to make the amount in the recipe.

I usually get about seven pints. I suspect Karen's right and that it depends on how finely you chop the veggies and whether you drain the tomatoes, etc. (I chop with a food processor, which I think Annie doesn't have, and I suspect the finer chop means more veggies for the same volume.)

You're right, Zabby, no food processor here and I keep my vegetables in big chunks, because I like thick and chunky salsa.

Moosemac, I'm happy your salsa turned out well. Frankly, I go easy on the jalapenos on a couple of batches too, we label it "sissy salsa", for those hot pepper wimps among us, like my daughter Ashley and like me on some days.
