vschlaf, you are going to use 1/3 cup of vinegar, 1/3 lemon juice and 1/3 lime juice? That's a good mix, but make sure you keep the whole cup total. Yes, waterbath pints for 15 minutes.

I hope this batch is closer to your liking. As I mentioned before, you could taste before bottling. I don't know if it would help but if it's too "sour" for you, you could add a little more sugar. That might just make a sweet product, but you could take a little out, mix some in and taste, it never hurts to try.

I wouldn't sweeten up a whole batch, mind you, just a little right out of the pot....

The newewst posts are pushing the oldest posts off and are deleted. The web site here has only so much room and the hundreds of newer threads move to the end based on their last posts date. Once new threads are put here on page one, the oldest ones are deleted to make room for new., If they were all left on, we could see threads dating back 10+ years, but most are barely year 2008 now, unless older ones are 'revived' by new posts to old threads, they are simply gone for ever. Thats why there is only 67 pages of threads. As you know 'Annies salsa' has MANY threads already, so why create the wheel again???

I thought I should let you know what works for me! I use just under 1/3 cup sugar and use 1/2 lemon concentrate and 1/2 white vinegar. I can not tell you how amazing this tastes (to us anyways!!) I know everyone has different tastes but keep trying as this is the most amazing salsa!

I started a new thread because I wanted to comment on it and I didn't think anyone would refer back to the old ones to see my new thread. I'm still figuring out how to use this site. And trying to figure out how to cann.

Actually, if you post new info on an older thread the thread gets moved back up to the top of page one again. This way, it keeps older threads from getting deleted. If you reload or refresh the web page it shows all the new posts (even in older threads) for that very second.

You said - Ive decided to take the 1/3 cup of vinegar and make it part cider and red wine vinegar. Then I will use lemon juice and lime juice But you didn't say for a total of 1 cup and that could be very confusing to other readers. There must be 1 cup total acid.

Yes I did mean I would use 1/3 cup of red wine and cider mixed. Then I would use 1/3 cup lemon and 1/3 of lime. But, I agree with you about using annie and angelacan's idea.
I will give it a try this weekend.

I am new but I have noticed that Dave is VERY helpful...I want to thank you for all the tips/advice/corrections/time, etc. that you take to keep us all on top of things! I am sure there are many other helpful people on here, but like I said I am new here...so thanks to all of you too!

Made 7 pints of Annie's salsa yesterday. Followed the recipe except lowered the amount of green peppers and compensated with hot banana peppers (kept pepper content to 1 and 3/4 cups total) Used 1/2 cup cider vinegar and 1/2 cup lime juice.
We're very pleased with it!!
One question: I find it a bit sweet to my taste. Can the sugar amount be lowered without compromising the overall viability of the recipe?

Yes, you can reduce the sugar. It's not a safety issue.
I find each batch varies based on the sweetness/ripeness of the tomatoes and onions, how hot the peppers are, etc.

We have fun "rating" each batch as to the heat level.
A "1" is very mild, "5" being Hot!! I try to stay around a "3", but do make other batches for gifts, etc.

It's a rough job having to eat up the "mistakes", huh? LOL

Thanks Deanna! We found this batch to be rather mild, but we're not really into HOT, HOT!! lol

However, we may up the hot pepper amount on the next batch and definitely lower the "sweet" a bit.

We (just the two of us) have eaten one pint already, just since yesterday afternoon. :-)

Nacho chips and salsa dip; quesadillas with salsa; scrambled eggs this morning WITH salsa!! lol
