Italian Prune Plum Preserves

Italian prune plums are on sale here, so I tried this recipe. Nothing fancy, but a wonderful flavor just the same. It made 6 cups of preserves (+ leftovers for the fridge):

6 cups of pitted Italian prune plums, lightly chopped (I prefer bigger to smaller pieces).

2 cups sugar

1 box Sure-Jell Low/No Sugar pectin

1 lemon

Add plums to large pot with about 1 cup water. Mix in Sure Jell. Add juice from the whole lemon & use a grater to grate lemon zest into the pot. Bring to a boil. Add remaining sugar. Basic instructions say to boil hard for one minute, but I cook my jams on a lower heat until the syrup sheets when dripped from a cool spoon. BWB for 10 minutes.
