Stuffed Poblano Pepper Recipe

I have a large crop of poblano peppers this year, so I just improvised a stuffed peppers recipe that is really simple and incredibly tasty. I figured I'd share and maybe others could chime in with pepper recipes (especially banana peppers and anaheim, because I have so many of those, too)

Feta stuffed poblano peppers:

6 cored full-sized poblano peppers

1 block feta cheese

2 large garlic cloves, finely minced

handfull fresh parsley, chopped

spray extra virgin olive oil

set oven to 350 and mix feta, garlic, and parsley

stuff peppers with feta mix and put on baking sheet covered with olive oil. spray tops of peppers with oil.

place in oven for aprox 10 minutes (until peppers soften)

move peppers to top rack and turn oven to broil. watch carefully so tops brown slightly, do not char.

Remove and serve.
