Red Hot Sauce from BBB

Hi all. I'm planning on making the Red Hot Sauce recipe from the BBB tonight and was pondering some substitutions - comments and suggestions will be greatly appreciated!

The recipe is pretty basic tomatoes, hot peppers, vinegar, sugar, pickling spice. I'm planning on roasting half of my peppers and adding a dried habanero. Garlic seems like a good candidate for addition. Also, what if I substitute brown sugar for white? That might add some complexity, but will I ending up with BBQ sauce? I'd like a warmer flavor than pickling spice. I wonder if achiote would be good. Allspice? Cinnamon?
