Canning wild game

Has anyone tried canning trout? I have a recipe in my canning books and thought about trying it, but what would you do with it? Patties? We do can salmon and make patties and a DELICIOUS soup with it.

I'd also like to try canning pheasants. I do can goose breasts by cubing them and then just adding a bit of bullion and garlic to flavor. But I'd like to can pheasant with the bone in to make it easier. Has anyone done this before?

I'd appriciate your suggestions.
