What is your favorite tool/gadget for preserving the harvest?

I'm pretty new to gardening and preserving veggies/fruits on a regular basis. As I've been diving in, I often find myself thinking - "Gee, I bet there's a tool or gadget that would make this task easier."

So what are your favorite tools and gadgets that make using the bounty easier or more fun?

So far, I'm loving my food mill - It makes it so much easier to get rid of seeds and skins when making tomato sauce and such things vs. doing one at a time peeling and deseeding.

What's in YOUR kitchen that I will want to run out and buy after you tell me about it? :)

Good knives - definitely, Mandoline, Victorio tomato mill, full set of SS stockpots, and for today my Pampered Chef apple peeler/corer.

This will sound a bit silly, but we garden a relatively large area, and I use and really love the almost fifty-year-old Ford tractor, which moves compost, manure & mulch, mows the field and woods roads, and picks up and moves rocks. I made fun of my husband when he bought it second hand about 12 years ago, but I probably use it about as much as he does now. As I age, having a machine to help with the heavy chores is really nice. Like duluthinbloomz4 I love my scuffle hoe - cuts both coming and going, and doesn't need lifting - just shuffle it back and forth to get rid of weeds. I like goatskin gardening gloves since I can throw them in the washing machine when they get too grubby, but they are tougher than fabric gloves and quite flexible. I love my straight edged spade, which I use for edging as well as for digging in soft soil. It has a D shaped plastic handle on a wooden shaft which is warmer and has less vibration than metal. I'm not sure that any of those qualify as gadgets, but they are my favorite and most-used tools.

The only persimmons we have are the native ones that grow wild here. We have those trees all over our property. I don't pick them until after we've had a hard freeze or two, which generally is November. They are strongly astringent before the first freeze, then they are much better after a freeze or two and even better if they've turned black. I do have to fight the coyotes for every single persimmon from the shorter trees because the coyotes will eat them while they're still green. I think that's why we have so many persimmon trees---the coyotes 'plant' the seeds after eating the fruit. Canned salsa is perfectly safe. Just follow the directions precisely and don't freelance or alter recipes. I made over 140 jars of Annie's Salsa last year and we give them to friends, family members, co-workers and neighbors, and no one has died yet. : ) So far, Annie's Salsa is my favorite of all the kinds I've ever made, and because you do add canned tomato paste to it, it has a texture/thickness much closer to that of commercially canned salsa. The folks who work with my DH love Annie's Salsa so much (we give it as Christmas gifts most years) that they almost cry if their gift bag doesn't have a jar of Annie's Salsa (some years I don't have 100+ jars of each thing I've canned, so they don't all get the same things in their Christmas gift bags). It amazes me that something so simple makes people so happy. Habanero Gold jelly is another great success story from the Harvest Forum. Frozen salsa can thin out a little when you thaw it because of the water content in the tomatoes. You can 'fix' it by stirring in a couple of tablespoons of tomato paste after you thaw it. You can sometimes prevent it by chopping up your tomatoes to make salsa for the freezer and then letting them sit in a colander or strainer over the sink for a couple of hours while all the excess moisture drains out. Most paste tomatoes are so thick and meaty that they don't give you watery salsa, but regular slicing tomatoes will because of their higher water content. For crisper pickles, use only pickling varieties of pickles, pick them younger and smaller, and pickle them as soon as you pick them--not a day or two later. Be sure you're cutting the ends off the cukes and discarding them. You also might want to try some of the recipes that call for the use of "pickle crisp" or for brining or fermenting. I freeze tomatoes all the time. I just put whole tomatoes in the freezer in ziplock bags, and then either use them for canning or cooking, but don't eat them raw half-thawed or fully thawed because I don't like the texture. For cooking, they taste perfectly fine. Most years I freeze gallons and gallons of bite-sized tomatoes after I've dehydrated them and we eat them for months and months. This year I haven't frozen much and haven't canned or dehydrated anything. Fires have kept me busy, so we've just given away all the extra tomatoes and peppers and stuff. I know I'll regret that this winter, but it is a priority to keep our firefighters well-fed and well-hydrated, so gardening/food preservation has taken a back seat to the work with the volunteer fire departments. I don't pickle okra, so cannot comment on it. Did you follow an approved recipe for pickled okra? If you did, I cannot imagine what went wrong. If your frozen okra turned black and slimey, I'm guessing you didn't blanch it first. If you don't blanch it, then the enzymes that cause ripening continue to be active and it can turn all slimey and black. I'd can salsa or any other tomato product with no fear whatsoever as long as I was using a safety-approved recipe. They all have enough vinegar, lime juice or lemon juice to give them the right (as in safe) pH. For Annie's Salsa, we liked it fine when made with vinegar, but then when I followed the safety-approved suggestion to substitute bottled lemon juice (bottled, not fresh-squeezed, because the bottled has a stable, tested, uniform pH level) and/or bottled lime juice, we liked the Annie's Salsa even more. We've canned hundreds of jars of Annie's Salsa during the last 5 or 6 years and haven't had a single jar go bad or a single person get sick from eating it. It is wise to be concerned about botulism, but with salsa properly canned, it isn't going to happen. I do hear a lot more about botulism with green beans or listeria with pickles, but that's because proper canning procedures weren't followed. For example, people will freelance and add some other vegetable to the green beans, which is a no-no, or they'll add oil or meat, also a no-no. Or, they'll use a boiling water bath canner for the beans, instead of a pressure canner, which is not safe. Lots of people make refrigerator pickles without canning them and that's where the listeria problem develops. Some old refrigerator pickle recipes that used to be considered safe have been found via modern-day testing to no longer be considered safe. So, as long as you're using current, tested, safety-approved methods, and not out-of-date, obsolete ones, you do not have to worry. It is good to be concerned about safe procedures, but not good to be paranoid. Canning isn't fun if you make yourself crazy with worry. : ) I freeze all my excess green beans. It is so much faster than canning and we like frozen better than canned. It probably depends on what you grew up with. I grew up on frozen green beans from the garden, so that's what I like. Some people grew up eating canned green beans, so that's what they like. Please don't be afraid of salsa. It is one of the simplest things to can. I believe salsa was the very first thing I canned on my own after I grew up and left home (used to make salsa with my dad when I was a kid) and I haven't had a single batch fail yet. The only thing I think is easier and more worryfree than salsa is jelly. Anyone can make jelly. I feel the same way about salsa though. With a safety-approved recipe that is followed exactly, anyone can make salsa. Even a caveman can do it.

dcarch, that's fantastic...but i'm such a 'permy' i suppose that i like being out in the weather... using wood for fuel. Smoking mozzarella on the 4th will be a challenge at 80 temp, but the ice block worked last summer. mustangs, got ya beat on the temp collection...just mowed on over, then another i stuck in the smoker with the plastic sleeve still on, lol. (i should just buy the whole display rack of the cheap ones) I probably could win the 'useless-junk-kitchen-crap' contest...i just spring cleaned out the kitchen drawers and filled a box to go downstairs with all the previous years boxes... I did toy and play with the rubber lid things recently in a cooks supply...the texture is a bit creepy like my silpats and don't care for the microfiber cloths...DH wore one to work stuck on the inside back of his shirt...wiggled down to the, fortunately tucked-in, waistband like a muffin top. Find them inside folded sheets... Not many new purchases recently. Like that thermopop but i treated us to a thermopen for valentines day during their sale and bought red. It has a special spot and is not allowed outside for the grill unless with special care... So i would have to say my maple tree that nature took down over the winter... Many future cooking tools and fuel coming soon. This is just the top 1/3rd and is now safely on the ground-ish. The base 20 ft is still standing. Not at all sad as we have a large herd of them...would have cost a small fortune to have it pro cut so nature did the hard costly work. Designed a dining table a few years ago and now see it may be built finally.

I use a chopstick to turn things right side out. Of course the seam ripper is indispensible!! I also have a magnetic wand to pick up pins and other metalic things that I seem to always be dropping. Even though it isn't an actual tool it really helps me keep things together. I have posted before about using a computer keyboard tray drawer to put my portable machines on. Inside the drawer I store tons of threads and the bobbins and other acessories that go with that machine.

This is like asking me which child is my favorite! I love kitchen gadgets, and I love canning.

But I think my favorite for canning is my 12 qt stockpot with the spegetti insert. It works great for blanching just about everything.

Though I'd hate to be without my KA with the attachments, or the apple slicer (I dont' use it to peel them) or my OXO hand peeler, or my assorted knives, or even my entire summer kitchen!

Counter space! And I think there's no faster way to make applesauce than with an apple peeler/corer and an immersion blender.

They're all like toys to me! I have a great little unit that pushes the onions through into nice little dices. Good knives for sure. I am having a Pampered Chef party in a couple weeks and I am planning to put my hostess benefits towards a mandolin slicer. I picked up a food mill at a thrift store for $4 so I am looking forward to using that next year. It is hard to pick a favorite but with the mandolin I see the beginnings of a beautiful friendship.

My new fav this year is a melon ball scoop! I grow cherry sweet pepper to stuff and pickle and nothing scoops out the seeds and insides like the small end of that melon ball scoop! I don't even have to remove the stem just scoop stem, seeds and all.

Next to that my pressure canner is my fav tool.

Plenty of large pots, WB canner, pressure canner.
Vitorio food mill, dehydrator, FP, large cutting boards with a drip ring around them, lots of freezer space.
The basic canning tools: funnel, lid magnet, lifter, etc. They are so simple, but tried and true and they work!

One "tip" that comes in handy is to keep your lids/rings warm in a crockpot. Frees up a burner on the stove when you're in production mode!!

Friends or family that enjoy canning too! I love having my mom help. We work well together and get to visit while processing. It just seems to make all the work faster and more enjoyable.

In the past two years, I've added a second SS 12 quart stockpot - that has made a big difference with WB quart jars, doubling the capacity. A new steam juicer makes work a lot easier as well. And I was given a gift of a decent 8 inch chef's knife, and thats a pleasure to use - stays razor sharp for a week.

The sauerkraut cutter - not so much.

My digital scale has saved me much time, and is a big convenience. Today for example, when making a double batch of tomatillo salsa, since I knew how much a cup of chopped tomatillos weigh, I didn't need to measure out each cup chopped. I just clean the tomatillos, weigh out what I need to make the correct amount, and chop. Same when it came to chopping up the 10 cups of onions and 15 cups of mixed peppers.

I don't have a KA but my cheaper version processor has saved a LOT of time cutting and chopping. Big bowls are so handy and every time I'm at Walmart and see some in the $1 bin, I grab a few. They usually go on sale at the end of summer. The big square strainer that fits on my sink has come in handy. The jar lifter that comes in the canning set is a life saver. I would love to have a good mandolin (sp?), one that can handle a whole cabbage. I'm sure I would use it in place of the food processor for many things. Lori

What great input - thanks everybody for sharing! I'm going to have to find the mandolin I have stashed some place and consider using my FP for doing some of the chopping. So far, I've been doing all slicing and chopping by hand.

Now a couple of follow up questions...

- Many of you talk about knives. Do you have a specific size and/or style of knife? (10" chef's knife for chopping, 7" paring knife for ?, etc).

- Trishcuit - tell me more about the gadget for dicing onions, please!

- Does the crockpot really keep the lids hot enough? And am I supposed to keep the rings hot too? I haven't been....

- Sounds like Tupperware; you have a party and invite people who (hopefully) buy stuff, then you get $$ credit for stuff too? Several of you mentioned Pampered Chef; I guess you think it's good quality?

Knives - I have all Wusthof knives. As for the ones that I really use when canning - I have 2 of the 8" chef knives (one for DH and one for me). DH likes the 8" narrow slicer but I prefer the 4" utility knife. We also have 3 of the small paring knives. Lastly, the 5" tomato knife is really helpful for coring tomatoes.

When if comes to knives - buy the best you can afford. I started with a chef's knife and a paring knife, and have been adding to the collection over time. I buy them a lot at Bed Bath and Beyond when they are on sale, and then use one of their ubiquitous 20% off coupons. Or else around the holidays, Bloomingdales has them on sale, and Bloomies also sends out discount coupons to their better customers.

Pampered Chef is excellent quality for the most part. There is the very odd item that doesn't work as well as a person would like but this is the exception rather than the rule. It is also pricey.

The onion chopper was passed along to me by a friend who was cleaning out her kitchen stuff. She isn't keen on cooking from scratch I don't think. I find it very handy. Didn't know it was one of those things they flogged on tv until I just looked it up. I'm sure you can find it on ebay for a lot less. PS you still have to do SOME onion work so tears will still be shed. It does do a nice neat job and saves time though.

I just bought a cheap knife set at Costco the other day. We will see how long they hold their razor sharp edge. They are the color coated blades with matching blade covers. For what I paid if they last a year I will be satisfied.

Re knives. Watching that TV show 'Americas Test Kitchen' / magazine Cooks Illustrated - they did a knife test on 8" chefs knives - brushed off the expensive German knives w/o much mention, and recommended the Victornox (Swiss Army Knife) as a very reasonably priced alternative.

Has anyone tried these, compared them with the expensive ones?

My favorite canning gadgets:

* I second the good set of knives! So nice not to have to chase veggies around the cutting board. (My good knives are Pampered Chef - expensive but worth it)

* A nifty little corn kernel cutter that I wasn't sure would work, but does a great job.

* Big S.S. pots - would like to have more of those, the kinds with a good heavy bottom. Anybody have suggestions on where to buy those affordably?

* Ball Blue Book and my pressure canner. Not a gadget, but a necessity.

Joy- the Tramontina brand is really good, and sometimes you can even find them at wallmart. My big 22 qt I paid $59 for and it's very nice. I use it on my induction cooktop.

I've also found the Hamilton Beach line is decent - solid bottom, stainless and holds up well. Also well within a smaller budget.

I'm rather appauled at what some high end pots cost. I'm glad to find soemthing decent in a price range that leaves lots of funds for other fun gadgets.

Though my knew potato slicer is a dud - I think I'd have to cook the potatoes first to get it to work. Ended up cutting all those pealed spuds by hand to make frenchfries. Ended up with one fresh meal and 8 servings frozen ready to toss in teh deep frier (another fun gadget, but not for the preserving side of the harvest)

Costco is good to keep an eye on for good pots on sale. Also the Paderno website. Check the sales. Excellent stuff that goes on sale half price.

Tracy, a lady in my church has started selling it; she took the torch over from the last gal who is moving on to other things. We have all been having parties to support her. It`s a great excuse to get together, chat, eat and shop. What more could ladies want, haha. I have the food chopper (the SLAP CHOP Is a pitiful excuse for the tool). The rotary grater is on its way as is the simple slicer. If I like it enough I may not have to order the mandolin. That food chopper is awesome by the way.

Another thing to add, a good diamond stone to sharpen your knives. It takes a little practice, but it comes in handy. I hate a dull knife!
