Unripe Pears- advice please

A large branch from my dad's pear tree broke in a storm, and it's loaded with pears. We plucked them all off, hoping to salvage them for something. I think they're too young to ripen up if I wrap them up, they are not full size and still pretty green. I could eat one though, so it's not terribly tart or rock hard.

Do you think they are only good for compost?

I was thinking of mixing them with apples for sauce maybe?

flatlander, I'd put them somewhere and wait. My pears don't ripen on the tree anyway, they always have to sit for a week or so to ripen.

Even if they don't ripen appreciably, they may get a bit less hard, and be easier to make sauce from. I sure wouldn't compost them.

Keep the Pears along with some ripe bananas in a container or paper bag and close it. If the Pears are near the ripening age you will get good results.

Thanks for the advice. I am looking/hoping for a shred of hope. I'm thinking that if I pear all the limbs down to just the tree stalk, I may be able to force the tree into dormancy and possibly new life for next year. Any other thoughts or advice on this?

Scott makes several good points. Fireblight resistance is a major consideration in HotLanta. Unless you're planning to make perry, or you like eating green, unripe persimmons, you do not want perry pears - they are, for all intents and purposes, inedible - or at least, not very tasty, often with lots of astringency. Magness and Warren are top-quality pears, but both are pollen-sterile, and neither are very attractive to bees, as they produce little or no nectar. Anecdotal reports - and I'm beginning to believe them - are that they are best grown as a limb grafted into other variety trees here and there, rather than as a stand-alone tree - at least you'll get some bees visiting the Magness/Warren blossoms while they're working the other variety - as a stand-alone tree, there's not much to attract a bee to visit. Some pear enthusiasts are also claiming that unless you put Warren/Magness on a dwarfing rootstock, like quince(the fireblight susceptibility there scares me mightily), you'll wait 15 years or more for them to bear - and they may never fruit heavily. While I like Keiffer, I know that many folks don't, but it can take FB hits, shrug 'em off and keep on growing and bearing. Douglas is reputed to be better than Keiffer, while retaining similar FB-resistance. Pineapple is another one I like, and a friend in Cookeville TN is raving about the Pineapple pear crop this year - heavenly! Dabney is supposed to be another good FB-resistant hybrid selection that I didn't see on the list Scott linked.

I think that any flowering pear in the area the OP lives in has the potential to become invasive, if the flowering pears aren't already invasive there. While it is west of the Appalachians, it is the same general climate as the areas of the SE where the flowering pears have become so invasive. I think almost any other tree - well, not any of the other invasives like mimosa or ailanthus - would be a better choice. If the general flowering habit of the pears is what is wanted, there are a few crab-apples that are similar in shape - selecting carefully can give fruit as well as flowers. A flowering plum, cherry or peach might be good also. Serviceberry might work (spring flowers and summer fruit), as might a dogwood (Kousa will give fruits also). Another choice might be smoke tree - one of the Cotinus cultivars - new ones have varying leaf colors. And I do like redbuds - there are cultivars for flower color as well as 'Forest Pansy' for purple leaves. A maple will usually give good fall color, and there are any number of good, tough, small ones, in addition to the 2 already mentioned. Hop hornbeam might work, as might blue beech (Carpinus caroliniana) although it is slow growing, so maybe not....

Natural pectin content in fruits varies greatly. Even tomatoes have pectin in them. Unless a lot of boiling and sugar is added to help natural pectin to set, its difficult for a person just starting out to make a successful jelly or jam with no added pectin. Some don't use any added pectin, but because diabetics must watch sugar intake its not a good idea to attempt it unless you have a lot of experience. Simply boiling down apple cider to at least 1/20 of its original volume will give a syrup and possible set. Adding things like peels, seeds, septa, and any hulls that surround seed cavities can help improve a natural set. Things like pepper jelly and others with very low amounts of natural pectin will simply boil down to syrup, or scorch badly before reaching any kind of set. Many people here have just strated out trting to make a home canned food. If they follow someones very old recipe and find it to be a failure, the person may not want to try a failure again. Pectin concentrates are quite common in the US and for most fist time jelly makers its a good idea to follow a recipe exactly before attemptng to set a jelly that has no added pectin and is also low in sugar. A BWB IS necessary no matter what place on earth you live on. The UK may not think its necessary, and is perfectly safe to can without any BWB, but thats simply giving dangerous and unpredictable safety to home canned products. I push the envelope some when using a steam canner, but because the canner has a rapid recovery and most canned items are high in acid, I don't worry as much about contamination. I would NOT home can without knowing about an alternative process that is done by commercial companies, and if its possible to duplicate some of these processes. Again, all high acid foods, which, by themselves are safer to home can compared to a low acid food that requires a PC and very high over 212 degrees F heating.

You could also take some of the less-ripe pears and grind them for a relish.

Here's an old Farm Journal recipe that uses hard winter pears. You can always count on country cooks to come up with ways to use everything.

Pear Relish

4 pounds firm winter pears (4 cups chopped)
3 cups 5% acid strength cider vinegar
3 cups sugar
2 T. canning/pickling salt
1 1/2 tsp. celery seeds
1 T. Allspice berries (optional)
6 medium onions, peeled (4 cups choppped)
15 large green peppers, seeded and stemmed (5 cups chopped)
4 hot red peppers, seeded and stemmed

Wash pears; peel, core and slice directly into salt water solution (1 T. salt to 1 qt. water) Note: could also use ascorbic acid crystals or Fruit Fresh

Combine vinegar, sugar, salt and celery seeds in 5-qt. kettle. If desired add allspice tied in cheesecloth bag. Bring to boil.

Put pears, onions and peppers through food chopper; add to kettle. Simmer, uncovered, until onions and pears are translucent, about 40 minutes. Remove spice bag.

Ladle into 6 hot pint jars, pressing down as you pack so syrup covers relish. Fill to within 1/4" of jar top. Wip rim; adjust lids.

Process boiling water bath 15 minutes. Makes 6 pints.

I'm sure you could find lots of other Pear Relish recipes through a search if you're interested but would like different seasonings or combinations of vegetables.

Just got a new Ball Book this week and there's a very interesting recipe for pear mincemeat. Could work!

Don't compost!! I've had severed branches continue to ripen outside.

Unripe fruits are often good for pickling. There's an interesting recipe for pickled pears in The Joy of Pickling. It's too long for me to type out right now, but I imagine there are similar ones online.

I often get seriously unripe pears. I put them in a cardboard box in the store room where its dark and higher humidity than the normal desert around here, and they will very often ripen within two weeks. Not tremendous flavor, but we made a great batch of pear / mint jelly this summer with a bushel of so of them, and it still tastes like pears.

I composted the left-overs.
