Anyone have a recipe for Lemonade Concentrate using Honey

Last year I made some terrific lemonade concentrate in pint jars using honey only as a sweetener. That's how I would make it fresh but it was wonderful having the concentrate -- just add water and it was ready to go. I found that recipe on the internet, but an wondering if anyone has a tested recipe for such?

No tested recipe to offer, but I don't see why you couldn't can it.

A couple of "experiences":

Thrice upon a time, I made the strawberry-lemonade concentrate from Ball sans strawberries since I didn't have any and they weren't in season. But I did have a huge box of lemons from my folks in Florida.

Lesson in Stupidity #1 - don't boil it (I didn't really READ the directions). Only bring it up to about 165 degrees before canning. One sip and I dumped that batch down the drain (I have hard water so it cleaned the drain at the same time :-)

Lesson in Stupidity #2 - don't get any white pith in there, so in other words, don't use a juicer - ream them by hand which is a total PITA and strain, strain, strain to get as much pulp out as you can. The pith (the pulp and rind, too in my opinion) turns horribly bitter after canning. Tasted it and dumped that batch down the drain.

Finally got smart and froze the third batch. Came out much fresher tasting. I figured there's probably a good reason why lemonade, limeade and orange juice concentrates from the grocery store are frozen and not in a "can" :-)

Freezer space is very dear, which is one of the reason I learned to can way back when. I made the lemonade last year from lemons and honey and that's it. I had cut them in half and put them on an electric reamer and it came out great. The honey gets kind of gelatinous in the jar and it looks kind of gross, but then you pour it into a pitcher, add cold water and it was the best lemonade ever. I've only started questioning it after reading here of recipes that are unsafe.

I've never frozen it, but I canned a strawberry/lemonade concentrate when the girls were still at home and they loved it. I'd probably start with something like half lemon juice/half sugar, add the amount that would fill one cube of an ice cube tray to a glass, add water and taste it. That way you can adjust the sugar to more or less sweet, depending on how you like it and how sweet the lemons are. I freeze plain lemon juice and if you freeze it there's nothing needed to "preserve" it, so other than getting the ratio of sugar to lemon juice correct there's no issue. There IS a first for everything, even as simple as boiling water and also making toast! How To Boil Water: boiling pot of water Boiling water is very easy to do, but it is crucial to many meals, such as cooking rice and Pasta. Choose a pot that's large enough to hold the amount of water you want to boil, and has a lid that fits. You might be tempted to use water that's already warm or hot from the tap, but this water has been sitting in your pipes for some time, getting stale. Use cold water if you're going to drink it or cook with it. DonÃ¢ÂÂt fill the pot all the way up. Keep in mind that anything you add to the boiling water will increase the volume, and plus, youÃ¢ÂÂll need to allow room for those bubbles to do their thing. Without enough room in the pot, for example, rice or pasta will boil over. Place the pot on the stove and turn the heat to high. If you want to speed up the process, put a cover on it Check for steam escaping from under the lid, then lift the lid carefully to see how the water is doing. Look at the water. This is alte but delicious for any event. My neighbor gave me this recipe and I made it for a friends shower last sunner. It was the hit of the party! Everyone wanted the recipe. A little different, but very good. I used boneless chx breast. Millionaire Chicken Makes 4 main-dish servings 1 whole 2-to-3 pound chicken (or bone-in chicken breasts) 1/2 head iceberg lettuce (or other crisp salad green) Sauce A: 1/4 cup soy sauce 2 tablespoons honey 1 clove garlic, minced Sauce B: 3 tablespoons peanut or corn oil 2 scallions (green onions), chopped 4 nickel-size slices fresh ginger root, peeled and minced 1/2 teaspoon whole Sichuan peppercorns, slightly crushed 1/4 teaspoon crushed red pepper Garnishes: About 1/2 carton cherry tomatoes, for garnish 1 small can whole water chestnuts, for garnish Poach chicken in simmering water until done. Cool, remove skin and bones, and cut meat into bite-size pieces. Arrange over shredded lettuce on a large platter. Combine ingredients for Sauce A in a small bowl; mix well and let stand for at least five minutes. I take alfalfa pellets the kind u feed to rabbits, and throw a handful in my potted plants every once in awhile. When I water the plants they disintegrate and mix into the soil. Its super easy lol. To tell the truth, I also just take a 1/4 tsp of miracle grow and dump it on potted plants if the are in 3 gal size or larger or in the ground. Then i just water it. I've never burned anything this way. **You must make sure they are watered well at least a half an hr BEFORE doing this. Then you are going to water it into the plants again after applying. Its probably wasteful but lugging around 5 gal buckets got old. You can also get the kind that hooks up to your hose. I'm thinking you might be able to make a really strong compost tea and strain it through some cheese cloth (maybe make a cheese cloth bag) then put it into the miracle grow container that screws onto the hose. I will have to try it and see. Then one could foliar feed that way without lugging a bucket around. Eta..The Alaska Fish Fertilizer works good to foliar feed. You are supposed to mix it in a bucket but you could probably make it more concentrated strain it then apply w a hose sprayer. I used to use it w my regular sprayer but it does clog it up if you dont strain it and its a pain to take the nozzle apart to rinse etc. I add a little coco wet to help it 'stick' to the foliage but you dont really need it. My plants went crazy with that stuff.

Yeah, it would be perfectly safe to can it. Again, the flavor might change from the heat processing, but give it a try. An electric reamer sounds like a GREAT thing to have to do this. I have one of those old glass ones that was probably my grandmother's. It's fine for one or two lemons, but doing a dozen or more gets old really fast :-)

I got lucky to day and found an entire case of grown in USA limes, 40 pounds, at a great price. An electric reamer will come in handy. It goes quite quickly if you put some music on and just keep going. Last year I made this recipe with lemons and honey and it was wonderful all winter long. All 20 pints got used!

Here's the recipe with the compact directions. Is it safe and can I use it with limes? I got it from a website called "Homestead Anywhere", which is why I am asking.

4 c fresh squeezed lemon juice, most of the pulp and seeds removed
2 c light agave or honey or 3 c organic cane sugar

Bring juice and sweetener of choice to just under a boil.
Fill sterilized jars, leaving 1/4 inch headspace. Place Lids and rings on.
Process 15 minutes.

Anyone else have any other recipes using lots of lime for canning without using sugar? I have no room in the freezer.
