Ideas for lemongrass-pepper jelly?

I have a bunch of Thai peppers, I made apple-jalapeno jelly that is really good on pork (and probably cheese and crackers). I love the taste of lemongrass, was thinking of making a Thai pepper jelly and have found a thread on making a basil-infused vinegar to use in pepper jelly but was wondering if anyone had any ideas about making a lemongrass-flavored (maybe some ginger too) version?

Found 1 blog that mentioned a lemongrass "tea" used as a base for jelly but I worry about the pH of the water. Or is it not a problem in jelly as long as I have enough vinegar or lime juice to acidify the peppers (boil the peppers in the acid before adding base liquid, pectin and sugar)?

I used Ball N-S pectin in an apple juice base (with 1/2C of ACV to acidify the 2 oz of jalapenos). Not sure I want to use 4C of apple juice in a lemongrass-ginger pepper jelly though.

I could use some help working out a lemongrass-infused base liquid (app 4C) for this recipe.
