I'm going to get started on canning pears soon and thought I would share a recipe I tried last year and just loved. I will also be making Annie's Pear Marmalade along with plain canned pints of pears.

Any other unique ideas?

GOURMET GINGER PEARS

Good flavor, use as a condiment.

4 lbs fresh pears

1/3 C finely chopped ginger root

1/4 C fresh lemon juice

5 C sugar

2 tsp grated lemon peel

1/4 C white vinegar

Wash, peel, quarter and core pears

(if extra large cut into eights)

Soak ginger in lemon juice while soaking pears.

Add sugar to pears and mix well to coat each piece. Cover and let stand overnight or 6 to 8 hours.

Stir lemon soaked ginger into pears.

Cook, uncovered, over medium-low heat until pears are tender and clear, about 1 hour, stirring frequently. (Cooking time depends on ripeness of pears.) Add lemon peel and vinegar the last 5 minutes.

Pack into hot, sterilized jars, filling to within 1/2" from top. Adjust lids at once. Process in boiling water bath 20 minutes. Remove jars from canner and complete seals unless jars are self sealing type.

Makes 7 half pints.
