Roasted Red Pepper Spread?

Ok-the Ball Blue Book's recipe calls for 6lb of red peppers, about 8 medium. Who (but the Jolly Green Giant), picks 8 MEDIUM red peppers out of their garden and it weighs 6 lb? My 8 weigh just over 3! I always go by the weight measurement for these recipes. I thought I had really nice sized peppers (red bell) this year. I know wieght can vary....thoughts? I don't have 6 lb if I use everything I have, so maybe I shouldn't bother.

Also, I seem to remember reading on a thread someone that didn't care for this recipe? Anyone who liked it?

Also, today I plan on making jalapeno jelly from the Pomona recipes- I've never made this before- advice is welcome :)
