What to do with 1 qt of ground cherries?

I've got a 2 lb Orange Minsk and a pint of small (cocktail sized) yellow tomatoes (Golden Queen?) that need to be used ASAP. Also a quart of ground cherries that DD decided she didn't like after all (though DH has been eating them). Any ideas for a salsa using these? I think it would be pretty but since DS and I don't like ground cherries (at first I though they were OK, a little citrusy with nutty aftertaste, but can't eat too many neither can DD, DS thinks they taste "weird") would it ruin the salsa to put them in?

If I don't use the ground cherries in the salsa what can I do with them (picked 9 days ago)? Will they keep another week in the fridge (not that I have much room) for DH?

Salsa I can't picture - that mix would be yucky IMO. Why do you have to combine them when they all will all be better on their own flavor-wise? Unusual combo dishes tend to fail far more than they work while basic ingredients recipes consistently work and are far more usefull.

But the cherries can make jam easily and can be mixed with other fruits for mixed fruit jam. You can make syrup out of them for dessert toppings. You can also make a pie out of them or turnovers.

The tomatoes can make a good looking yellow/orange tomato sandwich/burger spread just pureed with spices of choice.

Thanks Dave - I thought you'd left already? I just know people make salsa out of tomatillos and thought these were similar. I'll look for jam recipe, I don't think 1 qt is enough for pie?

I definitely am going to make salsa or jam out of the yellow tomatoes, that would be beautiful!

I've grown them in the past. They can grow quite big although I think there are several varieties, not well documented. The ones I've grown do ok without support, but ramble a bit (branches droop down, then grow up again). They are like a smaller tomatillo plant, which I find definitely needs some support. I think I have a decent picture of what a patch of them look like in September from back in 2008. Now that I look at it, I think they really could have used some support. In the front are some pepper and eggplants for comparison. I found picking them to be quite a chore. I think that's where the high price comes from. Too late to segregate, Seysonn. The seeds are saved mixed from multiple fruits. I saw bumble bees going from flower to flower in the garden, so that's why I felt there would be cross pollination. I could grow maybe 2 or three trial plants, but I want different varieties and don't have much room. Your suggestion on preventing cross-pollination sounds like just the thing if one of the trial plants shows the desired characteristics. Although I have been growing backyard tomatoes for decades, I am really new at seed saving and have no experience whatsoever in developing a variety. I have easily 100 surplus seeds, so I could farm them out if people here feel they would like a few to help the endeavor.

If I had that much onion juice, I would be cooking it down just to see what happens. I would taste along the way and then would make a decision on possibles uses. My initial thoughts are that the sugars contained in the onion juice would caramelize too. That would be a great base for a soup and especially good for a brown Cajun style Jambalaya. Also, that reduction could be dried too. And IMO, would have a very intense flavor. In short, I would be experimenting. Dan Semper Fi-cus

Here's another TERRIFIC recipe that calls for 1/2 pound of ground beef. So terrific, in fact, that next time I will double it and use a whole pound anyway. Actually, now that I think of it, it called for pork, but we don't eat pork, hence my substitution. But it was so heavenly with the beef, I was dreaming of the leftovers. I made this last week for Chinese New Year. I had a lot of napa cabbage and looked through my Chinese cookbooks for something different to do with it. I had potato cellophane noodles on hand, so I used those. I think it will be even better with regular ones. I will be making this often, not just for Chinese menus -- it is a GEM of a recipe because not only is it seriously delicious, it is SO fast -- on the table in about half an hour (at least if you already have minced ginger and minced garlic on hand), but it tastes like it's been simmering all day. Meatball Soup (Baitsai fensz rouwan tang) Adapted from "Harmony of Flavors," by Yung-chi Chao Chen, who writes, "This is a very delicious and substantial soup which combines meat, vegetables, and bean thread. It can be prepared and heated up before being served at banquets as well as at family meals." 2/3 lb. Chinese cabbage (celery cabbage or napa), about 3 cups, 1 1/2" sections 2 oz. dried bean thread (cellophane noodles) 6 cups water 1 1/2 T soy sauce 1/2 t salt For the meatballs: 1/2 lb ground beef [orig. recipe called for ground pork, about 1/4 fat] 1/4 t salt 1 T soy sauce 1 T minced scallion 1/2 t minced ginger root (I keep it already grated in the freezer) 1 t dry sherry 4 T water 2 t cornstarch Preparation 1. In a bowl, mix the meat with the salt, soy sauce, scallion, ginger, and sherry. Add water, 1 tablespoon at a time while with a spoon or a fork, mixing in one direction until all the water is used up and the meat has become a smooth paste. Sprinkle in the cornstarch and mix well. 2. Soak the bean thread in hot water for about 5 minutes. Drain and cut the thread into 6 inch lengths. 3. Wash the cabbage and drain. Cut the cabbage stalks into 1 1/2" sections. Cooking In a saucepan bring 6 cups of water to a boil. Add the cabbage, bring back to a boil, and then simmer for 5 minutes. Add the salt, soy sauce, and bean thread and cook for another 2 minutes. With a spoon scoop some meat mixture and with the help of the palm of your left hand, form the meat into a ball about 1 1/4" in diameter. Wet your left hand beforehand and also dip the spoon in a bowl of cold water every time you start a new meat ball. Drop the balls in the boiling soup one by one until all the meat is finished. Cover and simmer for 5 minutes and serve hot. Gung hay fat choy!

I only see cherries, "ground cherry" and "ground cherries" aren't giving any results. Do you have a link? Just treat them like cherries (except don't have to pit)?

There are some ground cherry recipes in my old Farm Journal canning book. I'll dig those out in a bit and post. They sounded pretty good - I was even considering planting some this year but ran out of space in the garden.

I saw a recipe for apple and ground cherry pie. I was considering making it because it was mostly apples. I think ground cherries are delicious...like 2 or 3 of them...then they taste funny. If I make it this weekend I can let you know how it goes.

In my experience, ground cherries last a long time on the counter, and last even longer in the fridge. I had some that sat out on the counter for almost a month (oops). A few of them dried out but they didn't go bad. Amazing.

Here's Jamlady's recipe for preserves (she says using lemon rind or lemon juice for pectin hides the taste of the ground cherries, so she uses apple instead).

3/4 pound ground cherries
1 cup water
1/2 pound sugar
1/4 pound peeled, thinly sliced, small pieces of apple (or quince)

Boil the sugar, water and apples for 1 minute. Simmer for 2 minutes. Add the husked and washed ground cherries. Simmer until thick enough to set on a frozen plate (no estimated time given). Seal and BWB for 10 minutes. Makes 2 8-ounce jars.

I bought some at the Farmer's Market this morning - hope to make this tomorrow.

Edited to add: My Farm Journal book has been hidden by the house elves - I will find it when I'm not looking for it. And I don't have to bother making preserves tomorrow - DH ate most of them already. I was surprised - I really didn't think he would like them THAT much!

I've got a couple of bags in the freezer from last year that I've been looking to do something with, and recently ran across this jam recipe that might just be the thing... might be another option if you're still looking for recipes

I grew them a couple years ago. I ended up making a ground cherry sauce with them - kinda like applesauce. I packaged it in half pint jars. And then used it in place of applesauce in baking (oatmeal-applesauce muffins).
