Ideas for using about 1 qt of onion juice?

I am caramelizing about 10 lbs of onions before dehydrating them. About 1 qt of liquid leeched out which I drained and saved. It has the look and consistency of milk and is pretty sweet, but also pretty strongly flavored of onions. I am looking for some recipes for using it and am open to just about anything. My initial idea was to make onion rolls or onion pretzels with it. I thought it might be tasty reduced to a thick syrup and used as a meat glaze. If you have any ideas I would appreciate it.
