Forgot the onions -- help!!

Son of a @#$%$#@#!! This is what happens when I try and do things when I'm tired. Long story short. I canned a batch of salsa late last night and realized this morning that I didn't add all the onions and peppers. Can I add them in and reprocess? Is the taste going to suffer because of the extra cooking?

Ugh -- SO mad!

Did you put in *any* onions and peppers? If you did, I'd just leave them alone b/c the texture will suffer, you can always throw in some fresh to make it crunchier and more like pico de gallo when you open each jar, or if you don't have fresh onions and peppers at the time but just need some more zing, you can add hot sauce or ground cayenne stirred in.

If you forgot all the onions and peppers then I guess you've got tomato sauce?

Hi Ajsmama,

Yes, there is probably about 1/4 of the required amount in there, which is probably why I didn't notice when I was processing them. I thought that I had to have the exact proportions in order to ensure safety. I'm not sure why the texture would suffer? If I opened the jars and cooked it for the required time to bring it up to the required boiling point and then re-jarred and processed wouldn't it be the same as doing it right the first time?

I'm a fairly new canner, so I appreciate the assistance!

MY contractor (hah hah, hubby) Also didn't allow for the thicker tile (didn't listen to me!). He tiled in pretty tight to the outlet so the ones in the link won't work for us. Longer screws might do the trick, but they wont have much support. If your tile is already covering your box you might be in the same boat as us. Maybe you solved your problem by now but... We actually found someone in HD in the tile dept that knew where to find what we needed. The electrical dept does have the type linked above, but in the aisle NEXT to them (in our HD) they have an accordian type. They are called outlet spacer and are little strips of plastic that can fold in on themselves and basically you fold however many you need into what amount to a, well I'll call it a spacer. It slips over the screw and gives some support between the screw where it goes thru the outlet and the actual outlet box. They are like and inch wide, and as deep as you need, you only use as many "folds" as it takes. We didn't try it yet, but combined with longer screws it should work.

There were just those two that were that big.... the rest he picked were just normal medium sized onions and smaller... but these two were really big... and juicy sweet too.. Got to find out where the neighbor got his sets from too..I would like to plant sets like that next spring...

Thank you so much for the comments! Yes, I researched the lutron Caseta Wireless and it is fantastic! Steve I understand where you are coming from, but in my situation where I wasn't around much for our build (I have a demanding seasonal job in Nebraska) i wasn't able to specify some things. Chinese ingredient -- help me ID (forgot)

Thank you, Olychick. That looks right. I bought this ingredient about a year ago when I was thinking about trying my hand at making Chinese alkali noodles. I guess there are a couple of alkali ingredients one can use -- sodium carbonate or _(forgot element)_______ hydroxide. I never did find enough time to experiment. I also bought a small bottle of alkali or lye water. I have never tried the IMAGE Search on Google. So, you just supply an image (from storage or copy/paste) and enter the image for Google to search? Maybe that would work for photos of old gadgets I've come across. I looked, but failed to find any "Translate this" option on any of the pages. I'm using an iPad. Thanks again!

There is no safety issue, assuming it was a safe recipe to begin with, as long as you do the reprocessing within 24 hours. But you have to dump it all back into the pot, reheat and do all the cooking called for in the recipe, wash the jars, use new lids, etc. And it will be somewhat more mushy. I wouldn't do it but all depending the recipe used, it's your choice.

In general that is true but it was low acid ingredients you left out. Adding too many low acid ingredients can cause safety issues. But leaving low-acid ingredients out does NOT cause a safety issue.

I'm not sure why the texture would suffer?

Double cooking plus double processing = softer mushier texture.

OH, that's fabulous, Dave! Thanks, I was dreading it. I have some picky eaters in the family, so they'll be thrilled with the low-onion/pepper variety!

*doing a happy dance as I go to take the jars out of the fridge and onto the pantry shelf*
