Spaghetti Sauce Recipe ?

I have searched and can't really find what I am looking for, so maybe posting this question will help. In my family we have two different taste preferences.

1). I cook ground beef with green peppers, onions, garlic and canned tommatoes. This is a very light sauce and fresh tasting. 2 family members prefer this.

2). Ground beef cooked with a jar of store bought sauce added. 2 family members prefer this.

I would like to find a recipe that I can make and can that is somewhere in between the two. Not too thick and pastey tasting. Still getting that fresh tomatoe taste and lightness from the first method, so I don't have to make two different kinds of sauce when I make spaghetti. Any recipe ideas? Thanks.

Sugar is added to many commercially prepared sauces. To help to keep the fresher taste, the tomatoes could be run through a Villaware/Roma food strainer to extract all the pulp and bypass the seeds and skins. I also cut them in half and dig out most of the watery liquid befoore ruuning through the food strainer. This will yield a thicker sauce without a lot of cooking to reduce it down. When serving, the meat would be sauted with onions and peppers beforehand, and then added to the sauce. I think this would be the best of both worlds. Fresh flavors can't really be obtained by home canning, but this method gets quite close. You could also freeze sauce too.

While I'm not making any 'guarantees' about the safety of this recipe, here's my own family pressure canned 'basic' spaghetti sauce recipe, which hasn't killed anybody yet ... Using enough tomatoes to nearly fill an 18 quart stock pot ... 3/4ths San Marzano / Roma or other sauce tomatoes 1/4th Beefsteak / Better Boy or other juice tomatoes Wash and hull tomatoes, cut out bad spots, grind up tomatoes ( skins and all ) in a 'meat grinder' add 1 tbsp sugar, oregano, marjoram, basil, red pepper flakes to taste. add 2 cans tomato paste for additional thickness simmer with lid off for about 6 hours, stirring every 30 minutes. This is a judgement call based on specific tomatoes used, and can run anywhere between 4 and 8 hours. When cooked down to desired 'thickness', start transferring to sterilized 1 pint canning jars. Add 1/2 teaspoon kosher salt to each 1 pint canning jar as you fill Can for 25 minutes at 10 psi At the time of opening a canning jar and serving, then and only then do I add sauteed chopped peppers, sauteed mushrooms, or any other 'wet' ingredients !!! The cooked down tomatoes by themselves may be near the 'borderline' of safely low pH ... therefore I don't add anything except 'dry' spices to the basic sauce I am canning. I also individually add the 1/2 teaspooon per pint of canning salt to make sure that there is sufficient salt concentration in each and every jar to 'discourage' bacteria growth.

I like "Blue Ribbon Preserves," but some of its recipes don't follow currant canning guidelines and I avoid those. The curd is an example. Hence, the caution about using some of its recipes without careful checking. However, comparing the recipe on page 254 (I'm assuming it's that one and not the "Easy Spaghetti Sauce") to the one in "So Easy to Preserve," which is a standard, safe canning guide, the 15-pounds of tomatoes recipe calls for 2 cups of low-acid vegetables (1 cup each onions and sliced mushrooms) plus let's say an added 1/2 cup of assorted fresh herbs. It also has increased acidity with the cup of red wine. The oil is precisely half of that in the "So Easy to Preserve Recipe" as is the tomato weight. The "So Easy to Preserve" recipe calls for 2 cups of low-acid vegetables, not including the pound of mushrooms, which is about another 6 cups sliced or 2-3 cups cooked down. In other words, double the tomatoes and more than double the low-acid veggies than the "Blue Ribbon Preserves" recipe. The processing time (also pressure canned) is also 10 minutes less for pints than "Blue Ribbon Preserves", which calls for a full 30 minutes for pints. I'm not "official" so take it for what it's worth, but in this case I'd feel comfortable canning a recipe more acid and processed for a longer time than the University of Georgia-approved one in "So Easy to Preserve." I'm sorry but that is a cooking recipe, not a canning recipe. In most cases cooking recipes cannot be canned but they can be frozen with no problems. Since there has been no lab testing of this recipe there simply is no way to know what the pH is (although with so little added acid it would be quite high), what the density is, or what the pressure canning processing time would have to be. Plain tomato sauce can be turned into all sorts of things after opening and the more things you add to it before canning the more its uses are limited. But you could always add a little dry Italian seasoning to it if you wanted. You can always safely add dry herbs and seasonings (onions, basil, oregano, etc.) as they don't affect the pH like fresh herbs and seasonings would. Mix in a bowl: 1 lb ground meatloaf mix (beef,pork & veal ground meat) 1/4 cup of grated Romano cheese 1 tbsp minced garlic or 1 tsp garlic salt Form into 1" meatballs Cut 1 lb sweet italian sausage into 3" long links In a 4qt saucepan: Over high heat Pour about 1/4" of olive oil (doesn't have to be EVOO(first press), regular Olive oil will do. Brown the meatballs and sausage in the pot until they are firm. Turn heat down to medium....and add: 1 large can tomato puree and stir with a spoon until the pot is glazed (all little pieces of browned meat that may have stuck to the bottom are mixed into the tomato sauce). Add and stir in: 3 cans of water (use the tomato puree can) 1 small can of tomato paste When the sauce is hot, toss in a pinch of baking soda, and stir in. The sauce will foam, stir it in and then turn heat down to low. Add: 1 diced clove of garlic Sliced button mushrooms Let simmer (no lid) for 1-2 hours. Let simmer

Thanks Ken - no sugar for sure.

Linda Lou - Thats why I came here, for a safe recipe. I will not be canning the sauce with meat or anything else for that matter. Just wanted to know which sauce recipe was the favorite for that "fresh tomatoe taste". I do not like a thick pastey sauce.

Consider using the BBB recipe for Stewed Tomatoes for the family in group 1 and add them to the cooked ground beef at prep time.

They include all the ingredients you list and you can add the garlic but they do require pressure canning. It would be a thinner chunky sauce or you could puree the jar after opening and then add it to the meat for a smooth but still thinner sauce.

BBB also has a good Spicey Tomato Sauce recipe or you could try NCHFP Tomato Vegetable Juice blend recipe and cook it down to sauce level prior to canning.

Any of the sauce recipes only have to be cooked down to the level you want since you don't like a thick sauce.

The same link I sent has one without meat, too.
The other suggestion of the seasoned tomato sauce, spicy tomato sauce, or the stewed tomatoes are also good ideas.
I am sure you will find one that you like.

I did not even think of stewed tomatoes. My mother used to do them with sugar and I hated them, so the words stewed tomatoes are not even in my vocabulary, but I think that might be exactly what I am looking for. Will try and thanks.

The sugar is optional so leave it out if you want. :)

Most 'stewed' tomatoes also contain onions, peppers, and celery. I don't add sugar unless I want a sweet sauce and thats rare for prepared tomatoes.

The celery in the BBB recipe for Stewed Tomatoes can safely be left out as well as the sugar.
