Two more canning questions - quickies, I think.

Was just reading the thread about jars sealing. All of my jars so far have pinged soon after coming out of the BWB, but I've always wondered this - why do you take off the rings? I've always left mine on, but after reading about taking the rings off, I did go back just yesterday and loosen all of them, in case tight rings are bad.

Also, I had a half-pint jar each of raspberry and peach jam that had about 1 inch of headspace. I figured I'd process them, then refrigerate and we would eat them here at home shortly. Is that safe?
