Can this be frozen? ...and two more questions

One of my friend asked me this question, and I have no clue, but I told her I'd post and ask this at my favorite cooking site!

She plans to make a Weight Watchers dessert to bring to an employee pot luck, but wants to make it ahead of time and freeze it.

The recipe is simple:
one box of Angel Food cake mix
one big can (20 oz) of crushed pineapple in its own juice (the juice will be used, too)

Mix everything together, the pour into a 9 x 12 pan and bake according to directions on Angel Food cake mix box.

Question #1:
Once it cools, will she be able to freeze it for a few weeks until the pot luck event, or will it 'suffer in any way?

The Weight Watchers recipe apparently uses the box mix that is all-in-one (no separate packet of dry egg whites to whip).

The boxed mix she purchased is not an all-in-one mix...it has two packets in it--one packet is dry egg whites, which she is supposed to reconstitute and make into stiff peaks by adding water (I guess maybe she can use the pineapple juice). These egg whites then get folded into the other "cake" package in the box mix.

Question #2:
Does anyone happen to know if the "dump and mix" method will work, or if she will have to whip the egg whites and then fold them into the mix and *then* mix in the pineapple/pineapple juice?

Question #3:
Does she have to cool the cake upside down in the 9 x 12 baking pan?

I don't know for sure, but I probably wouldn't try freezing a combination of fruit and cake mixed up like that, because when it thaws, I suspect that the juice would seep out of the pineapple and turn the cake into mush. Kind of like when you buy a frozen fruit pie, or make a pie with frozen fruit, you mustn't thaw it first, for the same reason, you end up with mush for the bottom crust. I could be wrong though, perhaps someone who bakes more sweets than I might know better.

I'm not a baker, but I agree with Rachelellen about the mushy result from the fruit.

I don't think the dump approach will work, either. The packets are separate for a reason. I think she'll end up with something much denser if she doesn't follow the package directions.

Cake freezes very well, so if I were her I'd make the cake per directions on the box. Wrap it well. Freeze it. Whip up a pineapple glaze the night before and bring it in a bowl for people to spoon over their servings. I'm not a fan of pineapple but love Angel Food, so I like the idea of serving it on the side.

For over 30 years I had a cement pond, triangular in shape, about 5 feet long which naturalized. Lots of lilies, water hyacinth and gold fish plus guppies. ocasionally added water, but it was in full sun; didn't have an algae problem. No filter, no special water treatment. This was in Southern California. It ended up with a dirt bottom because the lilies, fish waste, etc drifted to the bottom. Water was clear as a bell, lilies were colorful. Our koi pond on the other hand 25 feet away is filtered, treated, etc. and it turns completely green every so often. Koi love it but its much more work.

As long as the old stems (canes) are alive they will send out new growth. A hard freeze will kill back mature stems but a frost will only kill back soft new growth. I'd prune away dead stems after a hard freeze but would just leave them be after a frost. The dead tips will usually just dry up and drop on their own. If there's more living plant when the temps warm up it's likely that you'll get blooms sooner.

Wow I've missed some activity on this thread! Thank you all so much for all your incredibly valuable help. In the end, I realized that I was definitely over thinking the whole system (better to over think it than under think it, though, right?) and we will be installing standard horizontal strapping with gaps between the straps. The air gap created will be better than most houses built in our area and since we are in a moderate rainfall area I do believe it will be adequate. Hi there, GOOD QUESTION!!! I was thinking the same thing b/c we're having similar weather here in Boston. We woke this morning to serious frost in the yard. So sad. Anyway, our pool builder assured us that they can do the gunite up until December and that it's the plaster that needs a warmer temperature. That said, I sure wish it'd warm up, we're still waiting on our permit and I'm really anxious that the timing won't work out. Good luck!!!
