A&W Red sauce

Long ago, when going to an A&W meant car service, the hot dogs were served with what they called a red sauce. It was nothing like any catsup that comes out of a bottle, but had visible seeds (like celery seed) in it.

I've tried to duplicate, but have wasted too many good tomatoes. Might anyone have a recipe?

Yeah Taste of Home published it several years back. See link below. Not not for canning, fresh use only although you could freeze it.

The sauce that I had contained no meat. I suppose that if you left the ground beef out, you could can it safely--especially if you pressure can it.

Well, I made the strawberry glaze, sliced the bananas and covered them with the glaze and then refridgerated it. I had extra sauce so I put in another dish. Well, the bananas and the glaze were so thick that I could pick up a square. So I made a jiffy cake mix and then when it was cool, I put the square on top. Remember that extra sauce? Well it was very thick so I warmed it and added a bit of water to thin. Then I used this on top as a topping after it had cooled. My husband loved it!! I thought it was very good too. Was like strawberry shortcake only with bananas.

jerzeegirl, while I'm having some success with the cast iron, it's 10" on the bottom, and we need a wee bit bigger and I tend to mess up the dough getting it into the skillet - I still want a stone! Made another pie last night - way too much mushrooms, sausage, cheese, etc.! DH loved it, I found it far too filling! So you found 2 minutes to be the perfect parbaked crust too?! : - ) Hmmph, and I thought I was the queen of freezing - it had not occurred to me to freeze the crust after parbaking... I'll do that next time - what a time saver! Thank you! I do freeze my raw dough... I let it thaw in the fridge (cold fermentation) - anywhere from 2 to 6 days works well. I let it proof in an oiled bowl in a warm location for 2-4 hours. Then I use this method to stretch, but where he 'pounds' in the middle I don't, I like to just form my crust, then use my balled up fists to rotate it... we like a thin crust and bubbly thicker edge : ) I'll set the dough down 3-4 times to check it, and by then it keeps shape. This is the latest recipe I found that is a-mazing - ann_t'srecipe! I double the recipe, freezing all but one for a pie in a few days. At the bench cutting part is when I wrap to freeze. To all those who contributed to this thread, thank you so much! I used roasted plum tomatoes, added herbs (yes, plllog's marjoram too!), garlic, and just blended to a rough sauce - the sauce was far better! Next time I'll try ann_t's method of good canned tomatoes (must find!). Not cooking the sauce is the key for me - so thank you everyone!!! Lars, wish I had fresh herbs now to use, but next summer I will!

My kitchen fridge freezer has a small pullout drawer that keeps tid-bits of herbs, compound butters, parm rinds, ginger, a Myer lemon and some half lemons, (woody herbs like sage and rosemary freeze beautifully from fresh). Garlic herb butter w/olive oil. Pesto. A bag of roasted garlic, etc. It is my go-to for perking up so many things. Handy being so close to my prep area. I had a good Thai basil harvest I packed in a 1/2 pint in EV oil. Not as good as fresh but I can get the flavor with a teaspoon scoop since oil never freezes solid. Lemons can get expensive here so having a bit to grate from the freezer for just that reason is often what is needed. Perky flavors.

Ok if you don't want the A&W Coney Dog Red Sauce then:

A&W HOT DOG SAUCE

1 can (32 oz) tomato paste
1 can (32 oz) tomato puree
3/4 cup sugar
1 small onion, chopped
2 tbsp plus 1 tsp cider vinegar
1 1/2 tbsp plus 1 tsp salt
1 tbsp chili powder
1/2 tbsp ground black pepper
1/2 tbsp celery seed

Place all the listed ingredients in a blender and then cook on very low heat for at least 3 hours.

If you Google 'A&W Red Sauce' you'll find all sorts of links to the above recipe from several different sources.

As for canning it, it is probably ok but it has never been tested so is a do-at-your-own-risk thing.

I don't remember eating that red sauce. I guess my experience with A&W eons ago was limited to the root beer floats.

But I did find several interviews online with the granddaughter and the son of the original inventor of the sauce. She said her grandmother created the recipe because her grandfather didn't like the taste of commercial ketchup.

The family recipe still sold in Michigan supposedly has no sugar (though it may have some alternate sweetener).

Also in several interviews she said there was "no vinegar" and in another interview she said it had "little vinegar" because her grandfather didn't like the taste of vinegar either (picky gentleman).

Of course, again that doesn't preclude something like lemon juice.

Yes, if I'm right they use to sell what they called sauce buns for people that didn't want the hot dog just the bun and sauce. I have been looking for that recipe for years.They had one in Kankakee,Il and one in Bourbonnais,Il. They are now named Jaenicke's Drive In - Bourbonnais, IL. Same sauce and still can't get the recipe.

The orginal "Red Sauce" does not have sugar or vinegar.

You will know if it's right when you can smeell it it I tried several receipt but none tasted or smelt like the original
