Green tomatoes early? Or have to wait til frost?

We have one beefsteak tomato plant that got so big it fell over and broke, can I do anything with all the green tomatoes? Seems like every recipe references late season tomatoes.

Do you use the really hard small ones? Or the big ones that have a little yellow in them (still pretty hard)?

I'm a Yankee, never had a fried green tomato and I don't think my kids would eat them either. Any recipes for sweet things, maybe pickles? My SIL's dad makes chowchow, frankly no one up here knows what to do with it.

Thanks for suggestions (recipes would be good too)! Besides the ones from the broken plant, I may have to pick a lot in self-defense b/c every plant had a hornworm on it - had to throw a dozen (some of them big heirlooms) in the compost after picking the worms off and squishing them.
