red onions with honey question

sorry about all these questions but i got a pressure canner last year (after not having one for about 20 years and i am on a roll.. :)

my question is, i made the red onions with honey on page 68 in the ball blue book it calls for white wine so i used white cooking wine and i am getting ready to put them up but i thought i better make sure that it was ok before i do?

also (dumb question) what makes them safe as it dont call for vinegar? i never canned onions before, and i am getting ready to can green peppers from a recipe i seen on nhcfp website, it calls for blanching or roasting (i think i will roast them) you dont need to add vinegar that is why i am going to try them has anybody tried these?
