Linda Lou's Chicken Stew

I have searched and search for Linda Lou's chicken stew and even emailed her. I cannot find it. I never heard back from her. I remember she said her husband loved it. I cannot find the thread. It's a stew or something like that. Not sure if it was canned or not.

So sorry to be troublesome, but I have looked and searched.

This is the respons I got from Colorado State University. I tried emailing Minnesota, got an email saying they didn't answer questions, had to contact Iowa state. I am doing that now, waiting for their response, which I will post if I receive one. This is my copied and pasted email I got today. Response (Mary Schroeder) - 09/13/2006 12:48 PM The different products and processes can be confusing, so it is good that you are checking. You are right that many Extension Fact Sheets do not list stewed tomatoes. They are a thicker product and therefore do require pressure canning in order to ensure adequate heat penetration. Please refer to the University of Geogia's National Center for Home Food Preservation site at www.uga.edu/nchfp/ under canning tomatoes for the recipe and processing time for stewed tomatoes. They are the test site for all the USDA-tested recipes and therefore have the most reliable information. Stewed tomatoes should be processed at 11 lb psi (plus 1/2 lb per 1,000 ft increase in elevation above sea level) for the following times: pints 15 min. quarts 20 min. To clarify the information that you saw on the U of Minnesota site, they conducted their own research for processing the tomato mixture. As stated on their site, it can be water bath processed ONLY if you are sure the tomatoes are a high acid variety, and that the ingredients are not altered. This method has a very long processing time in addition to recommending that the mixture be boiled for 10 min. prior to serving. If you only have a water bath canner, then you could follow these instructions; however, you should also add lemon juice if you do (1T per pint; 2T per quart). The lemon juice is not necessary when pressure canning. Hope this all makes sense. Good luck with your canning.

Yes, Nancy I deliver, but only on the condition I can stay for a week or so and visit! LOL "Half stew and half mashed potatoes" LOL that does sound good, Adopted... They have been having so many BOGO on boneless pork chops lately, that I have a bunch in the freezer. And for grilling, we prefer chops with the bone. This will be a good way to use the boneless ones up! I may just earmark this recipe for next fall's soup party! Linda

Sherry, the kids didn't have much luck when they went hunting last night. But we just got back from doing a little dumpster diving behind the grocery store. It's Thursday and I find it's one of the best days to go snooping. Here's what we found to add to the Poopy Stew: ~2 rutabaga's, just have to cut the soft spots out and remove some leaves ~3 bunches of parsley, probably equals 1 bunch by the time we remove the black stems ~partial bottle of oyster sauce ~several heads of garlic, they are rather dried up but will add some flavor ~ a bag of rice, might have some soy sauce that seeped in but that won't hurt ~2 really nice zucchini, only the ends are damaged ~unsold rotisserie chicken, I'll throw in 2 and keep the other two for another meal. ~3 containers of raw oysters, they smell a little off but you won't notice once they are added. How long you going to let this stew cook? We may head over to the other side of town later and check the dumpsters there. Nancy of the North

Hey guys (waving my hand cyberspace-style). I just wanted to follow-up with what I ended up buying. I happened to be in Macys, and by chance, they were having a weekend sale on Fiestaware, buy one piece get one free. Their Fiesta display contained a bowl in several colors, called an "Individual Pasta Bowl". This bowl had everything on my checklist - wide enough to manage big chunks of stew beef/potatoes (yet not too wide), deep enough so nothing will slosh out, they stack nicely for storage, and are microwaveable. And of course, the BOGO-free sale. It comes in a perfect yellow color for my kitchen. Actually the "yellow" I chose is what Fiesta calls "Ivory", but it's actually a soft buttery yellow, versus their "sunflower" color which is the bright yellow of, well, sunflowers. The Ivory looks very different on the Macys website than it looks in real life. The website also says it holds 32 oz. which it doesn't--more like 26 oz. if you fill it to the very top rim. I also ended up buying a few bowls in the Cobalt color, cause it'll also look good in my kitchen, and I love how the different colors look together on the table. I've found out that Fiesta makes this pasta bowl style solely for Macy's, and it is not sold elsewhere. I don't know why. Anyway, I'll link them. I tried to find it for you but can't seem to dig it up either. It may have been lost off the message board. But Linda Lou comes by on Pacific time so she will likely see your post and hopefully post it again.

I have not gotten an email from you.
Well, the only chicken I can is plain chicken in broth. If it is a stew recipe it would be from someone else. I am sorry, I am not sure what recipe you mean.
I make a great chicken pot pie from the canned chicken, though.
I hope you find the recipe you want. I do know of a chicken soup recipe that is supposed to be really good.

Maybe it was your pot pie!! Would you please list it. And I would love your chicken soup recipe also. Is that for canning?

I'll second the request for the chicken pot pie recipe. My daughter loves them. The ones in the store are so filled with chemicals that I feel guilty buying them for her.

I posted some info on making meat pies using chicken, turkey and beef. I add things like potatoes, peas, carrots, onion, string beans, and of course a thickened gravy sauce made with Clear Jel. I don't need any recipes! I use Au Gratin pans or the slightly smaller loaf pans. Line the bottoms and insides with pie crust, spread margerine on the raw crust, fill each with the meat mixture, add a top crust and seal. I also cut a small round vent hole in the center. They get bagged in Food Saver bags and frozen. They take about an hour to bake in a toaster oven at 400 to 425 degrees. I place a piece of foil on top to prevent premature browning. The foil is removed the last 10 minutes. I have about 20 assorted in my freezer right now.

I also make Chicken Cordon Blu with on sale boneless skinless chicken breasts. Pound them out between plastic wrap, to 1/4 inch, spread a bit or mustard inside, add a slice or two of swiss cheese, a slice or two of ham, or Canadian bacon, fold the edges over to cover, Flip it over, coat with seasoned bread crumbs, wrap with plastic wrap, bag in FS bags and freeze. These take about 30 minutes to bake. I also make a kind of Chicken Kiev with herbed butter and bread crumbs inside. Both are easy to make and bake.
