Have you determined why they didn't seal? If the salsa has been in the fridge for weveral days, I think I'd just freeze that batch! It can be re-processed, but should be done within 24 hours and it will probably be mushier (is that a word??). Possible reasons for not sealing: 1. Jars over or under filled. 2. Pressure not consistant (did you pressure can or BWB?) 3. Chips in jars 4. Old lids 5. Top of jars not wiped clean completely ("chunk" of something under the lid). 6. Long shot...but Bad batch of lids. Let us know which type of processing you used and maybe we can help figure it out. Deanna

Lucky you to have that extra bit. Sure you can freeze it. The texture may be slightly different, but some people on Harvest actually prefer Annie's salsa frozen. You don't have to cook it more than you have or BWB. It's perfectly fine to eat it taken right from the fridge or frozen and then thawed. Carol

Sorry, that is incorrect. Boiling 10 minutes before consumption will kill the botulism toxins. It will not, however, kill the spores, which can re-generate additional toxins, so it's not a permanent solution. That's why Robin first suggested a long boil and the additional acid. Botulism doesn't survive in a high-acid environment. "Before eating home-canned low-acid foods, heat to a rolling boil, then cover and boil corn, spinach and meats for 20 minutes and all other home-canned low-acid food for 10 minutes before tasting. This will destroy any toxin present." [See link below for full text.] It was a rule among old-timers, who often did boiling water bath things like green beans, that they be cooked thoroughly before consumption. They ate a lot of overcooked olive-drab beans, but it was a safe alternative. It still rests with the OP how she wishes to proceed, whether by discarding the salsa or using those corrective measures she feels comfortable with.
