Needing a quick answer....

I just ordered a copy of Ellie Topp's Small Batch Preserving this spring and have only used it for jams and preserves. I seem to remember last year that there were posts that indicated some of the recipes were not suitable to can. This could very well be a figment of my imagination (grin). What I want to can today is:

CHUNKY BASIL PASTA SAUCE

8 cups coarsely chopped peeled tomatoes

1 cup chopped onion

3 cloves garlic, minced

2/3 cup red wine

1/3 cuo red wine vinegar

1/2 cup chopped fresh basil

1T chopped fresh parsley

1 tsp pickling salt

1/2 tsp granulated sugar

1 6 oz. can tomato paste

It just now occured to me that I have 6 oz. cans of tomato sauce, not paste. Any advice on that while we're at it.

Aside from that, is this recipe safe?
