tomato soup recipe safe for water bath canning?
Comments (7)No way, not with all that butter (with a couple of tested exceptions no fats/oils allowed) and definitely not with the flour, thickeners aren't allowed either. What is the source of that recipe? There are only a couple of tomato soup recipes approved because of the fats and dairy products and thickeners so many recipes include. One is Katie C's Roasted Tomato and Garlic soup and the recipe for it is in many threads here. Otherwise it is canning tomato sauce and turning it into soup after opening the jar. Comments (4)Please, for your safety, do not use the recipe that floats around with butter and flour in it. It is not safe, it can lead to botulism ! There are so many people who are posting this recipe. So, here is the one from Ball that several folks I know of use. Some cut down on the sugar. TOMATO SOUP Makes about 4 pints Do not thicken with flour or other thickeners before canning. Do not add butter or any milk. You may do so after opening, if desired. 4 quarts chopped peeled tomatoes 3 1/2 cups onions 2 1/2 cups celery 2 cups chopped sweet red peppers 1 cup sliced carrots 7 bay leaves 1 Tbsp. whole cloves 1 clove garlic 1 cup brown sugar 2 tsp. canning salt Combine all vegetables and seasonings. Cook until soft. Press through food mill.Add sugar and salt, cook over medium heat for 15 minutes. Ladle hot soup into hot pint jars. Comments (2)I'd say with the chicken broth, the garlic and onion, not in a million years. A tablespoon of lemon juice couldn't begin to reduce the pH to a level suitable for BWB. Besides, assuming the chicken broth is canned, you're canning canned tomatoes and canned broth amended with a few other ingredients, all available year-round except for the fresh basil.
