Mock Mincemeat - BWB?

I came across this recipe that does not have a BWB process time and would love to preserve it properly. I am also asking if it has enough acidity for canning it safely. There is no sugar added but it is naturally sweet with all the fruits in it, and I think I would use brandy flavoring (not oil) instead of real brandy.

Mock Mincemeat (no meat)

8 C green tomatoes,finely chopped

4 C apples, finely chopped

3 C raisins, chopped

1/2 C mixed candied peel (orange, citron, etc.), chopped

1 t. salt

2 t. cinnamon

1 t. ground cloves

3/4 t. allspice or nutmeg

1/3 C apple cider vinegar or white vinegar

2 T. apple juice

1/2 C Brandy (optional)

Combine all but brandy in a large saucepan. Bring to boil over medium heat, reduce heat and simmer for 2 hours, stirring frequently. Remove from heat, stir in brandy, then ladle into hot, sterilized canning jars, cap with lids. Store in cool dry place. Makes about 7 cups.

Thanks!

Nancy
