PC soups have reddish color

Last year was my first year using pressure canner. I did chicken soup and spaghetti. I followed the directions very carefully but when the chicken soup was done it took on a reddish hue. The spaghetti sauce seemed like it was burned even though I processed it for the specified time. I do use distilled water when I can things because I know that tap water can give a funny color. Any ideas? The soup was still good but just looked a little funny. Even the beans seemed to be a little discolored rather than clear water.
