Favorite tomato sauce?

I'm picking 10 pounds of tomatoes a day and my season has just begun. I'm so excited! Last year I made chunky basil sauce (Elle Toop's),which I will make again, in 50 lb batches, with frozen tomatoes. Just wondering what other favorite recipes everyone uses for a good, basic pasta sauce? I use my sauce for eggplant parmesan, spaghetti, or any other Italian type meal.

Will probably do some plain tomatoes, salsa and roasted tomato garlic soup, as well.

Also, am looking at hundreds of Reisentraube cherries and wondering what I might do with them. I may just buy a dehydrator and dry them.
