Spiced Rum marmalade

OK, ya'll can shoot me (or save my life) but would you tell me why (or IF) this will kill me?

The single change from an official approved recipe is noted.

4 cups finely chopped, peeled, cored, fresh pineapple

2 1/2 c white sugar

1 small lemon (unpeeled), seeded and thinly sliced

1 cup water (I used 1/2 cup water and 1/2 cup Sailor Jerry's spiced rum)

Everything worked as it always did and it's processing as we speak.

So the question is: safe as canned? safe only if refrigerated and if not, why (so I can adjust accordingly)
