'Putting Up' book review (Carol)

Carol - if you haven't already ordered this one you may want to pass. It is "short-range litmus paper" testing based for most all recipes I have reviewed so far. No PC, all BWB but with a tested and adjustable cooking thermometer inserted, and uses jar inversion for many things.

He strongly stresses "Acidified Canning" which is ok of course but requires pH testing of the product both before and after processing.

On the other hand, every recipe is in weights not number and comes with "Canning Notes" such as:

This is a hot pack, acidified recipe.

Initial pH must be below 4.2, Final pH below 4.

Recipe can be doubled or halved.

Recipes are mostly jelly and preserves, pickled vegetables, chutney and relish, and some soups.

It's going to take some time and care using this book I think. ;)
