Comments (63)I don't see it a hijack, but maybe important enough for its own new thread. First, not being familiar with BJs, I looked that up and may be missing the one you mention....I find a 6.5 qt size for approx $25, its definitely a cooker, not canner. To be considered safe to pressure can in, it must be large enough to hold 4 Qt size jars sitting on a rack, even if you don't plan to use quarts in it, it has to be at least that minimum size or is only a cooker for uncanned food. My 8 qt Mirro falls short by about an eyelash of the lid seating firmly with 4 quart jars in it - and that one I only cook in, not can. Those glass topped stoves can vary, some you may can on, others it will void the stove warranty. My sis-in-laws is JennAir and she has put her really weighty All American canner on it the last couple of years. It hasn't harmed the stove, but the problem I find in watching her can is the stove cycles up and down in heat setting, seems to be a built safety mechanism of the stove itself. She came very close to losing her 10#s pressure several times during the course of canning tuna 100 minutes last month - and I was wishing she had just brought her things here and used my electric stove with additional canning burner. I have gotten 14 pints of annie's salsa, 9 quart of green beans, 12 quart of dill pickles, 14 quarts of tomatoes, and 8 pint of Katie's roasted garlic tomato soup. Comments (8)I don't pressure can tomatoes anymore because I don't like the way they look. The tomatoes settle to the bottom and there is a 2 inch space at the top. When I HWB, the tomatoes are at the top and there may be an inch of liquid at the bottom. I know it takes longer but I don't care. So far this summer I've canned 56 quarts of tomatoes and every one sealed. I do not boil the lids, only wash in soapy water and run under hot and place on jars. I leave 1 inch head-space as that is what the Ball Blue Book says to do. As far as the seal on the lids, I think the material they are using today is much more reliable than years ago. Comments (13)<Yes, the gauge reads 10 PSI before the weight is on. You can put enough energy into the canner to do that. There has to be pressure for it to vent, whether it's 1 PSI or 10 PSI. > Sorry to disagree but not with a normal pressure canner in good working order. It simply isn't possible. All tested and approved models, including All American, have been extensively tested by USDA and by the manufacturers in both venting and non-venting mode. And any fully functioning canner with the exhaust vent open will boil dry before it will reach more than 5 lbs. And it will definitely do that with only 2" of water in it. It is a safety margin built into the canners. So if your canner is going up to 10 lbs with the exhaust vent still open then something is wrong with it. Most likely the exhaust vent is at least partially plugged whether visible or not and easily so if you have hard water as lime builds up in the vent pipe. OR the gauge is malfunctioning. I have a 915 and a 941 as well as several other models of canners and have used them extensively for many years . The 941 will readily exhaust a full head of steam well before reaching 5 lbs. on the gauge - normally it is at about 3 lbs. And when the weight is then placed on the vent pipe it takes an additional several minutes to rise up to 10 lbs and move the weight. If you contact the manufacturer they will confirm that for you.
